Essential Functions:
We are seeking a skilled and experienced Butcher to join our fine dining establishment. As a Butcher in our team, you will play a crucial role in ensuring the highest quality and standards of meat preparation, handling, and presentation. Your expertise and attention to detail will contribute to creating exceptional culinary experiences for our discerning guests. The ideal candidate will have a deep understanding of various cuts of meat, a passion for precision, and a commitment to excellence.
Responsibilities:
1. Meat Selection and Inspection:
- Source, select, and inspect the finest quality meats from trusted suppliers.
- Assess the freshness, texture, and overall quality of meat products to ensure they meet our standards.
- Verify that all meats received to comply with health and safety regulations.
2. Butchering and Preparation:
- Skillfully break down and portion meats into desired cuts, following precise specifications.
- Utilize appropriate cutting techniques to ensure optimal tenderness, flavor, and presentation.
- Trim excess fat, gristle, and undesirable parts from the meat to achieve the desired quality.
- Adhere to portion control guidelines, maintaining consistency in portion sizes for each dish.
3. Storage and Inventory Management:
- Properly store and organize meats in designated areas, ensuring freshness and preventing cross-contamination.
- Monitor and rotate inventory to minimize waste and maintain optimal freshness.
- Maintain accurate records of inventory levels, conduct regular stock checks, and notify management of any discrepancies.
4. Collaboration and Communication:
- Collaborate closely with the Executive Chef and Sous Chefs to plan and coordinate meat-related menu items.
- Communicate with the culinary team to ensure accurate and timely availability of meat cuts for menu preparations.
- Provide suggestions and recommendations for improving meat selection, utilization, and menu development.
5. Food Safety and Hygiene:
- Adhere to all food safety and hygiene standards, following local health regulations.
- Maintain a clean and organized work area, including proper sanitation of equipment and utensils.
- Ensure compliance with temperature controls during storage, preparation, and transportation of meat products.
Skills and Qualifications:
- Proven experience as a Butcher in a fine dining or high-end restaurant environment.
- In-depth knowledge of various cuts of meat, including beef, pork, lamb, poultry, and game.
- Strong knife skills and ability to execute precise cutting techniques.
- Familiarity with portion control and butchery standards.
- Understanding of food safety and hygiene practices.
- Excellent organizational and time management skills.
- Ability to work under pressure in a fast-paced kitchen environment.
- Attention to detail and commitment to delivering exceptional quality.
- Effective communication and teamwork abilities.
- Flexibility in working hours, including evenings, weekends, and holidays.
General Physical Demands for the Position:
- Fast-paced movements are required to go from one part of the restaurant to another.
- Must be able to stand, walk, lift, bend, and climb stairs for long periods of time.
- Must be able to bend, stoop, lift, reach, push, twist, walk, crouch, and squat.
- Prolonged periods were standing and preparing and cooking food.
- Must be able to lift up to 25 pounds at times.
- Must be able to work in a kitchen environment that may involve exposure to extreme heat or cold.
- Manual dexterity to operate cooking tools such as knives.
