WE LOVE OUR WORK.:Provide general and indirect supervision to all stewarding staff while overseeing all departmental organization, cleaning schedules, sanitation standards. Responsible for ensuring efficient and profitable operation of all stewarding outlets, continuous improvement of sanitation quality and equipment standards, overseeing and training stewards; verify daily assignments are completed with daily kitchen walk through. Ensure sanitation standards and cleanliness in all kitchen areas. Clean and sanitize all areas of the kitchen and operate the dish washing machine in a safe, accident-free manner. Coach and Counsel, track attendance, verify payroll, and schedule according to business levels; ensures the organization, sanitation and cost of the operation is consistent with the overall food and beverage goals and objectives.
ESSENTIAL FUNCTIONS
(These function are intended as a general illustration of the work performed in this job classification and are not all inclusive for this position)
- Maintain organization and ensure proper rack stacking, silver presoaking and operation of dish machine.
- Ensure proper set-up, breakdown and maintenance of all special events.
- Washes pots, pans and traps; maintains neat appearance of working areas and cleaning equipment storage areas. Washes, rinses, and sanitizes all dishware and utensils
- Perform special cleaning projects as assigned.
- Train new stewards as required
- Clean ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes and ceiling vents, according to schedule or as specified by chef.
- Responsible for swept and mopped floors. Keep floors clean and dry, pick up wet spills immediately
- Provide information and explain My Choice benefits, property amenities and marketing programs to our guests.
- Can operate dish machines to company and manufacturer specifications.
- Uses proper measurements of detergent and sanitizer in the dish machine.
- Restocks all dishes, glassware, utensils, pots, and pans. Removes all garbage. Breaks down, cleans, and sanitizes the dish machine at the end of a shift.
- Able to make quick decisions when dealing with departmental and employee needs.
- Keeps dish and other storage areas clean and organized.
- Staff, schedule, evaluate, train, develop and monitor team members; recommend wage increases, promotions, demotions, discipline and other employment actions for team members.
- Perform related duties and responsibilities as required.
EDUCATION AND/OR EXPERIENCE REQUIREMENTS:
(Related education and experience may be interchangeable on a year for year basis)
Completion of high school education or equivalent. Five (5) years of experience in stewarding, kitchen maintenance, kitchen operations or similar. Knowledge of food and beverage service operation is preferred.
ADDITIONAL REQUIREMENTS: (Licenses, Certifications, Testing, etc.):
- Possession of, and ability to obtain and maintain a valid drivers and gaming license within assigned state of employment
- Must successfully pass background check
- Must successfully pass an alcohol and drug screening
- Must be twenty-one (21) years of age
- Ability to use all tools associated with the position including but not limited to knives, slicers, and choppers.
- Ability to review and comprehend recipes and other necessary documentation.
PREFERRED KNOWLEDGE, SKILL AND ABILITY:
Knowledge of:
- Operations, services and activities of comprehensive regional operations program;
