About the Job
Encore Village of Schaumburg is currently hiring for a full time Sous Chef position. The Sous Chef supervises and coordinates activities of associates engaged in food production to ensure satisfaction, consistency, timeliness, quality and efficient service. Monitors safety and sanitation in the listed areas.
Responsibilities:
- Preparing meals and food to meet the specifications of guests in a timely manner.
- Properly measuring kitchen ingredients and food portions.
- Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
- Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
- Managing the kitchen inventory and ensuring supplies are fresh and of high quality.
- Ensuring proper food temperatures when cooking and proper storage afterward.
- Keeping the workstation and kitchen equipment clean, organized and sanitized.
- Taking charge of kitchen opening, closing and other side duties as directed by the Executive Chef.
- Monitors food quality, temperatures, portion control, meal times, substitution logs, resident confidentiality and regulatory compliance.
- Works with the Dining Services Manager, Dietician, Nutrition Services Manager and the Executive Chef to ensure proper production needs for all of the dining venues are met.
- Implements program services plan to improve services, quality and satisfaction of all service areas.
- Responsible for conducting daily associate stand up meetings to review menus and other resident information dealing with meal service.
- Conducts Daily Resident Dining Room rounds during meal service.
- Participates in training programs to provide a safe working environment. Complies with all OSHA regulations and other local, state and federal regulations.
- Maintains compliance to regulatory standards of food safety and sanitation
- Maintains Illinois State Food Sanitation License.
- Performs all other related duties.
Education:
- Position requires Safety and Sanitation Certification, Food Sanitation manager Certificate. An Associate Degree in Culinary Arts or equivalent experience.
Experience:
- 2-3 years in supervisory experience within the resident service area or hospitality industry.
