Position Summary:
Supervises and works the kitchen line of Marisol at the Cliffs. Supports and follows the Executive Chef's lead and works hand in hand with the other Sous Chefs. The Sous Chef will uphold kitchen safety and cleanliness standards while also executing The Cliffs' Mission and Values.
Essential Functions of the job:
- Works with the Executive Chef and other Sous Chefs to supervise and work the line.
- Oversee and lead daily operations of the kitchen
- Manage, coach, and train staff on kitchen duties
- Provide a good work experience for employees by being a role model with The Cliffs Mission & Values
- Maintain a safe and clean work environment for all employees in the kitchen
- Oversee service and maintain a high attention to detail throughout the shift
- Maintain daily prep lists
- Ensure proper sanitation of station and all coolers, including walk in and reach ins, including proper rotation of dry goods and perishable products.
- Knowledge of all stations in the kitchen to include but not limited to-pantry, sauté, grill, and expo.
- Line set up
- Able to temp all proteins to desired temperature, mostly beef and protein
- Able to handle a rush with orders on the line
- Attend meetings and complete paperwork where needed
- Follow direction of senior kitchen management and Executive Chef
Qualifications:
- 3-5 years prior restaurant experience
- Prior Sous Chef experience is preferred
Additional Job Duties:
- Attend seasonal off-site promotional functions
- Assist Executive Chef with daily functions, banquets, and take charge in the chef's absence
- Continue Education through books, magazines, culinary schools, and chef seminars
- Follow culinary trends
- Build good morale for staff
Physical Requirements:
- Ability to stand continuously for the duration of the shift (eight or more hours).
- Ability to lift small packages (excess of 50 pounds).
- Ability to work in stressful situations.
Education, Experience, Skills:
- High school diploma; culinary degree preferred.
- Working knowledge of guest services in a luxury hotel setting.
- Excellent command of English language.
- Ability to speak Spanish preferred
- Ability to work with and manage people effectively.
- Ability to multitask and work in mentally demanding situations.
