About the Job
Cedarhurst, a regional healthcare provider and true friend of older adults, seeks a service-minded, career-oriented individual to join our team as a Sous Chef at our Cedarhurst of Jacksonville community.
As a Sous Chef/Lead Cook, you will have to opportunity to connect with, and positively impact the lives of, our residents daily! You will assist the Dining Services Director in managing daily kitchen activities.
As a Sous Chef, working with the Dining Services Director, you will impact the lives of our residents by –
- Overseeing and organizing kitchen stock and inventory levels in the absence of the Dining Services Director
- Working with the Dining Services Director to maintain kitchen organization.
- Assisting in orientation and continued training of dining team.
- Instructing all team on operation, maintenance, and cleaning of all dining services equipment.
- Exhibiting thorough knowledge of and conduct hands-on training of staff on all food service positions and proper food handling.
- Assisting in ensuring food is properly prepared, portioned and served and monitors all food items to ensure the guidelines for temperature, taste and quality are upheld.
- Remaining current and up to date with all food safety licensing requirements for state, county, and local authorities.
- Assisting with proper documentation of temperature logs, refrigeration logs, sanitation logs and cleaning schedules.
- Supporting all catering, room service, special party needs, marketing functions, etc.
- Demonstrating a working knowledge of all dining service shifts and be familiar with individual assignments and resident dining needs.
- Covering shifts in the absence of Dining Services Director
- Developing schedules and place orders as needed.
- Attending community leadership meetings as needed.
- Learning and implementing Cedarhurst dining programs.
- Maintaining safety standards as outlined by Cedarhurst guidelines for infection control.
- Utilizing basic mathematical concepts such as addition, subtraction, multiplication, division, fractions, percentages, rations, and proportions to practical situations.
- Maintaining appropriate food temperatures by ensuring proper cooling/heating procedures are followed and equipment is working properly.
- Ensuring effective communication is being utilized by community staff with the residents’ families concerning residents’ care, encompassing their physical, personal, and emotional wellbeing.
- Working well with others and taking direction from management, as well as taking initiative with the capability to engage in conflict intervention and resolution for residents, families, employees, and others as needed.

While performing the duties of this job, the employee is occasionally required to stand/move, communicate, and identify written information.The employee is occasionally required to climb or balance and stoop, kneel, crouch, or crawl and lift and/or move up to 50 pounds independently; occasionally lift and/or move up to 200 pounds with assistance.
- Other duties as assigned.
To become a Sous Chef you will need –
- High School Diploma or equivalent
- Two years’ experience working in culinary production with food and restaurant knowledge.
- Formal culinary training preferred.
- Food Manager Certification preferred or ability to obtain.
- Applicable state/county licensure preferred.
- CPR or BLS certification preferred.
- Be able to demonstrate proficiency in Internet browsers (e.g., Explorer, Chrome, and Fire Fox), Microsoft Office programs including Outlook, Excel, Word and Publisher, electronic health records (EHR) systems, and any HR related systems if applicable.
