Description of Position
A Sous Chef acts as the second-in-command in a kitchen, overseeing day-to-day culinary operations by supervising kitchen staff, ensuring food quality, managing food costs, and assisting the head chef with menu creation, food purchasing, and maintaining sanitation standards, all while ensuring smooth kitchen operations and upholding high culinary standards; essentially acting as the head chef's right-hand person in the kitchen. This person will report directly to the Executive Chef.
Key Responsibilities of a Sous Chef include:
* Staff supervision:
Oversee and delegate tasks to line cooks, prep cooks, and other kitchen staff, providing training and guidance as needed.
* Food preparation:
Prepare dishes according to recipes, ensuring consistency in quality and presentation.
* Menu planning:
Assist the head chef in developing and implementing new menu items, considering seasonal ingredients and customer trends.
* Quality control:
Monitor food quality throughout the cooking process, ensuring adherence to standards and addressing any issues.
* Cost management:
Manage food costs by ordering ingredients efficiently, minimizing waste, and adhering to budget guidelines.
* Inventory control:
Maintain accurate inventory of ingredients and supplies, ensuring proper storage and rotation.
* Kitchen sanitation:
Enforce strict sanitation practices to maintain a clean and safe kitchen environment.
* Shift management:
Assign tasks to staff during each shift, ensuring smooth workflow and timely execution of orders.
* Problem-solving:
Address any issues that arise in the culinary operation, making quick decisions to maintain operation efficiency
Requirements:
* Strong culinary skills: Mastery of basic cooking techniques and ability to prepare a wide variety of dishes with precision.
* Leadership abilities: Effectively manage and motivate a team of cooks.
* Communication skills: Clear communication with both kitchen staff and management to ensure smooth operations.
* Attention to detail: Maintain high standards for food quality and presentation.
* Adaptability: Ability to work under pressure and quickly adjust to changing demands.
* Food safety knowledge: Understanding of proper food handling and sanitation practices.
* Education
High school diploma or equivalent vocational training certificate; certification of culinary training or apprenticeship preferred; Sanitation and Hygiene certificate. Food handling certificate preferred. Basic computer skills.
Pay from - $76,000 - $78,000 per year
