Summary:
Provide production leadership and support for food creation and development for research and development, special events, sales support, and in-house catering, which includes but is not limited to lead cooking, inventory management, food safety and sanitation standards, product production, packaging, and leadership within a commercial kitchen setting. Assist the Culinary Director with training staff employees and ensuring all procedures are done correctly and in line with the needs of the company.
Job Details: W2 | Full Time | M-F 8am-5pm
Responsibilities
This role works with the Culinary Director to:
- Organize, oversee, and manage culinary shift leads. Monitor production staff in compliance with use, PPE/sanitation, and production guidelines; monitor schedules and tools to ensure that all operations run smoothly.
- Create, test, & document the development of new/modified recipes for integration into main production use, according to requirements
- Develop food products and menus as needed for menu presentations.
- Own R&D tool, Parsley, for all production products, nutrition, and labeling/packaging content.
- Execute ordering weekly production for inventory through vendors and maintain a healthy relationship with vendors. Able to seek out new vendors for production if needed.
- Complete food logs, waste, inventory, and other operational forms in line with SOPs as required.
- Assist the Culinary Director in the training of new personnel. Lead and coach staff in the operations requirements, including training and follow Standard Operation Procedures.
- Communicate with the Culinary Director on recommendations to adjust inventory, and production forecast needs on a daily, weekly, and monthly basis for all products.
- Monitor material consumption and orders required food and equipment on a daily basis to satisfy the culinary production and special activities production plan(s).
- Prepare, set up, stock, clean, and manage the special catering in-house for events and activities. Must be aware of the content in catering manuals; update as needed.
- Develop the product and presentation content of special catering, events, demonstrations, sales support, product mailing with Ops, and other special activities presentation and tools required to execute the business.
- Ensure the area of responsibility is properly organized, staffed, and directed and that all delivery times are being met in a timely manner.
- Ensures food quality and product requirements meet required standards and exceed expectations.
- Handle general prospective staff inquiries and support the operations manager with solving problems
- Remain on budget and on time for all production and product delivery schedules
Required Qualifications
- High school diploma or GED.
- Experience in a food service environment in coordinating production or with four years of work experience in a commercial volume food service unit.
- Four years' experience in food operations and management.
- Two years of experience in a leadership or training position.
- Ability to use Microsoft Office and Google Docs.
- Food safety certification (Serv Safe or ANSI).
- Food Manager’s Certificate valid in Travis County / City of Austin.
- HAACP Certification
- Familiarity with creating operational tools & processes for recipe, inventory, ordering, and storage management.
- Relevant education and experience may be substituted as appropriate.
Preferred Qualifications & Experience
- More than four years of experience in a food service environment in coordinating production and serving 1000+ meals daily.
- More than two years of experience in a leadership and training position.
- Familiarity with USDA or FDA production facility requirements.
- Demonstrate strong interpersonal skills.
- Bilingual preferred.
- Ability to delegate tasks.
- Strong organizational skills and the ability to complete last-minute requests.
