The Position:
The purpose of this position is to ensure patrons receive outstanding food served in a clean, friendly atmosphere. This is accomplished by insuring all applicable laws, regulations, and ordinances are followed regarding proper food handling and preparation, as well as beverage serving. This position may provide lead direction to other employees.
Please Note: This position requires the ability to work a flexible schedule that includes working evenings, nights, weekends and some holidays.
Essential Functions
may be required to perform additional, position-specific duties.
- Supervises and assists with food production by producing and/or assisting kitchen personnel in production of all In-Suite orders, Concession stand items and TOPS/Catering, assisting with staff training, managing production timing, demonstrating proper techniques and methods for production of items and product, visually inspecting all items produced, and arranging PSL guest order items for delivery.
- Monitors main kitchen commissary inventory items by using FIFO method of rotation, taking inventory counts, documenting, and discarding out of date or spoiled products, and performing monthly inventory for budget reconciliation.
- Assists with scheduling and managing third party employees by communicating with third party vendors and training, monitoring, and communicating directly with personnel.
- Ensures equipment is in proper working order by inspecting the kitchen area for cleanliness and needed repairs and reporting results to the Executive Chef.
- Maintains cleanliness of foodservice areas by maintaining cleaning product inventory, training employees on proper procedures, assigning cleaning duties, and assisting with cleaning.
- Ensures staff members follow all applicable laws and ordinances by reviewing and enforcing proper food handling and preparation regulations.
- Performs other duties as assigned.
Job Requirements
Work requires broad knowledge in a general professional or technical field. A typical way to obtain the required qualifications would be:
- High School diploma or equivalent and three (3) years of relevant culinary experience as a Sous Chef in a high-volume/Multi outlet environment, or equivalent.
Certification and Other Requirements
- Must possess a valid Texas Class C driver’s license.
- Food Handler license.
Overall Physical Strength Demands
Medium: Exerting 20-50 lbs. occasionally, 10-25 lbs. frequently, or up to 10 lbs. constantly.
