We are seeking candidates for the role of Sous Chef who can provide a warm, friendly, cheerful & genuine experience to all our guests by delivering exceptional service and world-class hospitality to every guest, every time
Responsibilities include but are not limited to:
- Train and validate all culinary team members through the use of Sterling's kitchen training materials
- Maintain a fun and professional work environment grounded in our values, guiding principles and promises
- To be a part of new team member On-Boarding and orientation to the Sterling Way
- Has an ongoing system in place to assure food quality and standards per team member
- Maintain a standardized training program for all positions and ensure prep and service recipes are current and available to help train team members on standards
- Provide Chef de Cuisine regular feedback on team member's performance
- Accountable to cross-train Culinary team members on all aspects of the line
- Supports Chef de Cuisine/management team in all café priorities
- Ensure 100% adherence to all menu implementations and procedural changes
- Lead by example. Your standards are the standard, every shift and every day
- Helps the Chef de Cuisine run a great features program every day within the guidelines established within the Sterling Food Philosophy
- Maintain a Guest friendly environment at all times
- Dress for Success procedures are performed before and after each shift
- Cook times are adhered to and communicated to the team regularly
- Runs continuing Cafe education on food specs and standards for both Front and Back of the house through pre-shift meetings
- Assist with weekly inventories
- Assists Chef de Cuisine with review of pricing from our vendors and ensuring accuracy
- Helps ensure all orders are checked in to standard, establishes par levels all while executing for our guests in a Sterling Way
- Aids in the improvement of year over year performance at your cafe
- Point person for BOH maintenance and establishes and maintains an equipment repair log
- Keeps our kitchen cleaned and well maintained
- Ensures the walk-in is cleaned and organized daily
- Visually inspects food deliveries and uses only the freshest fruits, vegetables, meats and other food products of the highest standard in the preparation of all menu items
- Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with health department regulations, including coverage, labeling, dating, and placing items in proper containers of kitchen and service
- Properly rotate food products in order to keep spoilage and waste to a minimum
- Maintains the Industry –leading Safety & Sanitation standards for the Cafe
- Ensure local and federally mandated health code and regulations are followed achieving a Health inspection rating of A
- Completes daily line checks
- Never turns head on a standard. Chose not to serve
- Does whatever it takes to fix any issue
- Ensures all proper utensils are used daily
- Helps with continuing education on Food Specs and Standards for both Front and Back of the House through thoughtful pre-shift meetings
- Assists with purchasing products to spec from Sterling's approved vendors
- Aids in the education and development of team on proper sanitation issues
- Works closely with the Chef de Cuisine and the Health department to be pro-active about cafe sanitation
- Plays a proactive role in teaching and training of management and hourly team members about kitchen safety
- In dedicated training cafe, assists in teaching and training of MITs about kitchen
- Executes daily & monthly equipment cleaning schedule
- Completes weekly R&M walkthrough with the GM as directed
