Job Description
This position will work hands on with the Atlantica Restaurant & Londa Bar team. This is a hands on role that will be involved in the daily operations, will be flexible on shifts worked and is responsible for the guest scores related to food service and quality. This is a seasonal beachfront hotel, open year round, with peak in summer.
Position Pay: $65,000-$70,000/yr – Exempt Position (Salaried)
Hours: Both am and PM shifts, covering as needed
Weekend coverage needed consistently: If you are looking for weekends off, this is not the job for you
Bonus: This position is eligible to participate in an incentive program based on audit scores, beverage cost and labor efficiency for total potential earnings of $300 per month

Basic Function: Ensures guest satisfaction through the efficient operation of the Ala Carte F&B Operation. Trains, supervises and motivates staff while promoting quality of service and a sense of teamwork. Responsible for increasing profitability for food & beverage in the hotel's Atlantica Restaurant, L’Onda Bar, Rooftop Pool (seasonal).
Positions Supervised: Direct: Outlet Supervisors, Ala Carte Waitstaff & Bartenders, Host/Hostess, Busser, Cashiers, and barbacks.
Essential Duties: Directly supervises all front house restaurant staff. Responsible for hiring, training and administering annual performance reviews.
Responsible for monthly inventories of food, liquor & equipment and submits reports to the General Manager, due 2nd of each month
Coordinates scheduling of staff using weekly forecast and prior history.
Prepares weekly payroll, including tip reconciliation.
Prepares and conducts pre-meal discussion of policy for each shift, for each outlet.
Sets standards for side-work duties and ensures that all side-work is completed prior to the end of the servers shift.
Reports unsatisfactory food or beverage output to the appropriate manager and follows through on solution.
Makes positive suggestions to management concerning improvements in restaurant operation and profitability.
Supervises/reviews cashier close-out for shift ensuring proper reconciliation of revenues.
Responsible for overall menu and labor cost controls and in the achievement of forecasted budgets.
Enforces all standards of sanitation and cleanliness in all Ala Carte areas both front and back of the house.
Maintains uniform and hygiene standards of staff.
Prepares monthly menu abstracts for GM by checking and compiling P.O.S. systems food & beverage items purchased.
Continually walks the floor soliciting guest comments.
Ensures that all promotions and alcoholic beverages consumed, meet the requirements of the New York Liquor control board.
Responsible for coordinating, planning, implementation, tracking and assisting in advertising of all food & beverage department promotions, special events, functions, and routine products.
Conducts regular training and mandatory monthly departmental meetings.
Provides professional and courteous guest service at all times.
Develops short and long-term financial and operational plans for the hotel, which support the overall objectives of the company.
Assists in the preparation of the F&B portion of the annual hotel budget and Business Plan.
Monitors the performance of the hotel through verification and analysis of guest satisfaction systems and monthly financial reports. Initiates corrective action.
Active Member of the hotels service committee
Participates in weekly staff meetings and morning stand-up when available.
Implements and maintains local and national sales/marketing programs, thru all approved Social Media mediums.
Establishes and maintains a pro-active Human Resource function to ensure employee motivation, training and development, wage/benefit administration, and compliance with established labor regulations.
Maintains product and service quality standards by conducting ongoing evaluations and investigating complaints. Initiates corrective action.
Establishes and maintains applicable preventative maintenance programs to protect the physical assets of the hotel.
Maintains a security function, which protects both the assets of the hotel and the personal safety of employees and guests.
Implements and maintains effective two-way communication systems which cross departmental lines and reach all employees.
Develops new programs which result in an increased level of guest satisfaction and operational excellence.
Manages in compliance with established company policies and procedures.
Manages in compliance with local, state, and federal laws and regulations
Other Duties: Assists staff in greeting guests, busing and set-up during peak hours.
Assists in all promotions of the Outlets in the hotel.
Performs other duties as assigned by management
Equipment Used: Adding machine/calculator, computer, point of sale register system, credit card terminal, kitchen equipment.
Essential
Requirements: Minimum 3 years food & beverage management experience. Bachelor's degree in food service/restaurant management preferred.
Extensive understanding of the operations of all hotel food & beverage services. Supervision of staff and the ability to work within budgeted limits and guidelines.
Excellent interpersonal and communication skills both written and verbal.
Must be able to dedicate long hours (50 per week) and manage several simultaneous activities. Subject to exposure to wet floors, temperature extremes and excessive noise.
Requires bending, climbing, reaching, standing, walking, sitting, fingering, grasping, repetitive motions. May be required to lift objects of up to 50 pounds on occasion.
Must possess extensive knowledge of cost control procedures and techniques.
Maintains personal cleanliness and appears well-groomed at all times.
Training Needs: T.I.P.S. Certification, NY ABC Certification, Food Safety Certification

Measure of Performance: The job performance of the Bar Manager will be evaluated by the Director of F&B and the General Manager of the Allegria. The evaluation will be based on the fulfillment of the aforementioned responsibilities, based on information supplied by monthly profit & loss statements, TripAdvisor, Google and guest comments, Data Quest Shop scores, in addition to overall observations
