The Procurement Inventory Specialist will oversee all inventory-related responsibilities to achieve budgeted costs of goods sold (COGS) for food, beverages, and operational supplies. This role involves collaboration with procurement, operations, and IT teams to optimize processes, including linking point-of-sale (POS) items to inventory systems like Craftable, establishing variance tracking, and minimizing waste. The manager will analyze sales data, optimize recipe management, and enhance theoretical cost tracking across brands. They will also ensure inventory best practices, including par levels, batch recipes, and ordering processes, are implemented and maintained while aligning with seasonal sales volumes and organizational goals. Regular store visits will be conducted to drive continuous improvement and operational excellence.

- Oversee all inventory-related responsibilities to achieve budgeted costs of goods sold (COGS) for food, non-alcoholic beverages, paper goods, chemicals, and other supplies.
- Collaborate with procurement and operations teams to maximize group purchasing organization (GPO) efforts and rebates.
- Work with IT and operations to ensure all PLUs and modifiers are properly linked to the Craftable inventory system.
- Establish variance allowances with leadership and operations, and manage variance tracking.
- Partner with operations to minimize waste and control inventory efficiently.
- Set inventory levels aligned with seasonal sales volumes.
- Analyze sales mix data to identify top and bottom sellers.
- Improve recipe processes in collaboration with culinary leads and operators.
- Monitor and refine theoretical cost tracking to align with budget goals.
- Visit stores regularly to ensure adherence to inventory best practices.
- Establish and maintain par levels, batch recipes, and shelf-life guidelines using Craftable.
- Streamline and optimize the ordering process through Craftable.
- This position in 100% in the office or at a restaurant location.
- Strong analytical skills with the ability to interpret data and drive actionable insights.
- Familiarity with inventory systems such as Craftable or similar platforms.
- Exceptional organizational and problem-solving skills.
- Ability to collaborate effectively across teams and departments.
- 2+ years of proven experience in food and beverage inventory process
- Culinary experience preferred
