This is our city and our people.Overview:The Bradley is seeking a part-time Prep Cook/Steward to assist in our Arbor and Birdie's restaurants.
PRIMARY PURPOSE OF THE POSITION: The Pantry Cook is responsible for the timely, accurate preparation and plating of restaurant food items, such as salads, sandwiches, desserts, and cold foods on company specifications and function contracts. Also responsible to maintain a high degree of cleanliness throughout cooking area as well as control charts of all food items produced.
ESSENTIAL FUNCTIONS: (This list of essential functions is not exhaustive and may be supplemented and changed as necessary.)
- Responsible for daily preparation of all cold foods for restaurants and banquets.
- Prepare foods for pantry. Prepares food needed in restaurant, banquets, and employee cafeteria.
- Set up, stock, maintain and clean food preparation areas.
- Monitor the quality and consistency of all food served from the cold lines.
- Assist in directing and correcting the presentation and portioning of food according to The Murano standards.
- Prepare food in accordance with working minus, recipe cards and photos.
- Direct purchasing to ensure proper quality and quantities.
- Coordinate all food orders between station and food servers.
- Monitor food rotation.
- Perform the duties of opening and closing the pantry station to include stocking and cleaning, proper storage and labeling of all items.
- Cut all fruits, vegetables for garnish.
- Prepare salads in advance of the meal period.
- Display knowledge and direct staff in sanitation and sanitary food handling for food quality, control and proper plate presentation on all cold lines.
- Keep work area clean and organized.
- Attend all mandatory meetings as required.
- Complete other duties as assigned by supervisor to include cross training.
- Report all unsafe conditions immediately.
OTHER FUNCTIONS:
- Helps support staff (servers, bussers, runners) when needed in order to comply with standards and provide responsive customer service.
- Retains and maintains complete knowledge of all food and beverage menu items.
- Must have the ability to work a flexible schedule and late hours when necessary.
- Must have the ability to report to work on time and on a regular basis.
- Follow and maintain the Hotel’s professional image guidelines.
- Contribute to hotel goals for increasing sales and improving profits.
- Submit all lost and found articles accompanied by a Lost and Found report to Housekeeping.
- Regular attendance in conformance with Hotel standards is essential to the successful performance of this position.
- Fully comply with Hotel rules and regulations for the safe and efficient operation of the Hotel facilities.
- Attend mandatory meetings.
- Must have the ability to work a flexible schedule and late hours when necessary.
- Other duties as assigned.
