About the Job
Major Function:
Ensures high levels of food quality, presentation and cost control according to recipe cards.
Essential Functions:
- Provides the highest quality of service to the customer at all times by following the Capstone Commitment.
- Follows recipe cards and/or product specifications for preparing, seasoning, cooking, tasting, carving, and serving soups, meats, vegetables, desserts, and other foodstuffs for consumption in an eating establishment.
- Food preparation will include operating a variety of kitchen equipment to measure and mix ingredients; wash, peel, cut and shred fruits and vegetables; trimming and cutting meat, poultry and fish for use.
- Controls food waste, loss and usage per hotel policies and procedures. (Assists in setting plans and actions to correct any food cost problems.)
- Checks pars for shift use; determines necessary preparation; freezer pull and line set up. Notes any out-of-stock items or possible shortages.
- Starts food items that are prepared ahead of time taking into consideration meeting rooms, hospitalities or employee events. Whenever possible, avoids over preparation.
- Cooks orders as per chit from server. Handles any special request of guests in a positive manner.
- Prepares meals for customers requiring special diets.
- Assists in prep work of vegetables and condiments as required for the next shift.
- Assists with preparation, production, and service of special functions.
- Filters oil in deep fat fryer as appropriate.
- Assists in storing food when any deliveries arrive. Dates and rotates all food containers as required.
- Returns all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
- Makes sure that all perishables are being kept at the proper temperature (either hot or cold).
- Cleans the hood in the kitchen once a week.
- Is able to set up, operate, clean, and sanitize all equipment in a safe manner.
- Checks condition of area and equipment; notifies manager of areas needing attention.
- At appropriate time, starts break down and cleaning of cook’s line and any other necessary work stations. Completes breakdown at close of business.
- Practices “clean as you go” method, which requires that all equipment and all areas are kept in an orderly and sanitary condition at all times.
- Is extremely aware of cross contamination and how to avoid it.
- Practices safety standards at all times.
- Follows sanitation standards at all times making sure to follow proper hand washing techniques as frequently as possible.
- Wears proper uniform and name tag at all times in accordance with the Standards of Personal Appearance.
- Is able to move items weighing up to 50 pounds.
- Is able to stack items on shelves above eye level.
- Secures all coolers and storerooms at closing.
- Adheres to all work rules, procedures, and policies established by the company, including but not limited to, those contained in the Employee Handbook.
- Other duties as assigned.
