Diner Line Cook Job Description
Summary:
- At Black Bear Diners, we have been serving Good Old Fashioned Family Food since 1995. We are a fun, family-friendly concept known for our great homemade food, large portions and genuine, friendly service.
- The overall responsibility and expectation of a Line Cook in the kitchen is to cook great food for customers so they are satisfied and encouraged to come back to our restaurant.

Knowledge / Technical Expertise:
- Consistently prepare, cook, plate and finish all food items according to Black Bear Diner procedures and standards.
- Comply with all food safety requirements such as checking and maintaining temperature, dating and labeling products, rotating products so that oldest is used first.
- Stock and maintain sufficient levels of food products at line stations to assure a smooth service period.
- Portion food products prior to cooking according to standard portion sizes and recipe specifications.
- Maintain a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, burners, ovens and refrigeration equipment.
- Handle, store and rotate all products properly.
- Assist in food prep assignments during off-peak periods as needed.
- Complete side work for station and shift.
- Close the kitchen correctly. Follow the closing checklist for kitchen stations. Assist others in closing stations and the kitchen.Perform other related duties as assigned by the manager-on-duty.
- Be available to perform other related duties and fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor.
- Learn other duties as assigned.
Appearance / Uniform:
- Comply with all company standards related to appearance and uniform standards. Examples include requirements relating to hair, jewelry, shoes, suspenders, nametags, facial hair, etc. as detailed in the company handbook.
WORK Conditions:
- Ability to work flexible hours, including nights, weekends, and holidays in addition to normal business hours/days.
Postural & Physical Demand Requirements:
- Frequent reaching above waist, chest and shoulder level as well as reaching below waist level.
- Frequent to continuous need for manual dexterity of both hands (pushing, pulling, handling, gripping, fine finger controls, etc.).
- Continuous standing on hard surfaces for many tasks.
- Frequent hip flexion while walking for all tasks.
- Frequent exposure to cold/ below freezing and high heat temperatures (walk-in refrigerator, freezers, and ovens)
- Be able to work in a standing position for long periods of time.
- Be able to reach, bend, stoop and frequently lift up to 50 pounds.
- Bending, squatting, stooping for cleaning activities throughout the shift.
- Climbing on step stools for cleaning projects as needed.
