The line cook works closely with Sous Chefs and the Chef de Cuisine, this person can execute our cuisine at a very high level to our exacting standards day in and day out. Accurately and efficiently cooks menu items, prepares and maintains assigned station, and follows all plate preparation and portioning guidelines. This position requires a self-motivated individual that is eager to further their career in the restaurant industry.
- Know our timing standards and executes food orders within those stated limits
- Assumes 100% accountability for quality of products served
- Consistently and accurately follows our recipes to our standards
- Knows and consistently follows our cooking methods, temperatures, quality standards, kitchen ground rules, policies and procedures
- Stocks, restocks and maintains sufficient levels of mise en place at line station
- Portions food products prior to cooking following standard portion sizes and recipe specifications
- Maintains a clean and sanitary work station
- Properly cleans and maintains all equipment on the station and throughout the kitchen
- Follows proper plate presentation and garnish set up for all dishes
- Handles, stores, labels and rotates all products properly
- Prepares and completes assigned prep lists
- Assists in food prep assignments during off-peak periods as needed.
- Closes the kitchen properly following the closing checklist and assists others
- Attends all daily line ups and brings suggestions for improvement
- Performs other related duties as assigned by the Chef or manager-on-duty
- Punctual – be on time or early for each shift, be in uniform & ready to work before you punch in
