Executive Chef Matthew Resler (who helmed menus at Temecula’s Public House and the Rustik Fork in Riverside) will create the new eatery’s brunch, lunch, and dinner offerings. Benny and Mary’s will feature dishes like chopped kale salad with green and purple kale, Korean short rib tacos with bulgogi-braised short rib and house-made kimchi, bucatini with house-made fennel sausage and pistachio pesto, and a 12-hour braised short rib osso bucco with amaretto-butternut squash puree.
We are looking for passionate culinary professionals that want to learn, grow and execute our scratch kitchen. Chef Resler's menu is elevated classic cuisine we've all enjoyed in the past with creative twists that certainly will not disappoint. In this position, your principal goal will be to prepare high-quality meals that meet the chef’s exact specifications. You will be responsible for setting up stations, stocking inventory, and maintaining safety and sanitation standards. To be successful in this role, the ideal candidate will possess excellent communication and multi-tasking skills. Team work is vital to our success, we win together and will sometimes lose together. Job Duties
- Ensure the preparation station and kitchen are set up and stocked.
- Prepare simple components of each dish on the menu by chopping vegetables, cutting meat, and preparing sauces.
- Report to the executive chef and follow instructions.
- Make sure food preparation and storage areas meet health and safety standards.
- Clean prep areas and take care of leftovers.
- Stock inventory and supplies.
- Cook menu items with the support of the kitchen staff.
