We are searching for a motivated & experienced Lead Scaler.
The Lead Scaler holds the responsibility for overseeing the complete scaling procedure, while also providing guidance and training to fellow employees within the scaling department as they navigate the scaling process. Adhering to vital aspects such as food safety, quality, and regulatory mandates is of utmost importance when fulfilling the responsibilities associated with this role.
ESSENTIAL RESPONSIBILITIES & ACCOUNTABILITIES: include the following
- Adhere to company policies, encompassing Good Manufacturing Practices (GMPs), Hazard Analysis and Critical Control Points (HACCP) guidelines, safety protocols, and product quality benchmark
- Acquire a strong understanding of the baking process, participating in a constant cooperative effort to improve processes for quality and efficiency.
- Manually measure ingredients such as bases, salt, seeds, softeners, onions, garlic, etc., following specific recipes meticulously to prepare batches for dough processing. Assemble subcomponents into plastic containers and position them on racks intended for mixers.
- Complete paperwork ensuring 100% traceability of all scaled ingredients, including scaled ingredient scaled ingredient logs and batch runs sheets.
- Work closely with production supervisors, check dough schedules, and review product charts in order to determine what products need to be scaled. Ensure that all needed ingredients are scaled for products that will be run.
- Maintain the ingredient levels for all storage bins and replenish as required.
- Cover for breaks for Scalers and Mixers when needed.
- Alert supervision of any problems that may arise in the scaling process.
- Maintain cleanliness and organization of the scaling area. Scaling is a clean room and must be kept free of contamination and debris.
- Perform all duties required in the scaling cell in order to ensure that Scaling is always inspection ready.
- Understand, practice and lead by example in all safety efforts.
- Guide Scaling employees to ensure that they understand all Scaling requirements on daily basis.
- On occasion review all new and existing procedures to keep aware of expectations.
- Attends company scheduled meetings when applicable (i.e., safety meetings, production meetings, department meetings.).
- Participates in special projects and performs other duties as required.
- Fulfill any other duties as directed.
In addition to the essential duties and responsibilities listed above, all positions are also responsible for:
- Meeting company standards pertaining to quantity and quality of work performed on an ongoing basis, performing all work related tasks in a manner that is in compliance with all Company policies and procedures.
- Adhering to Company policies, procedures, and directives regarding standards of workplace behavior in completing job duties and assignments. Must follow all Company Safety policies, as well as all GMP regulations and all lock-out/tag-out requirements according to OSHA requirements.
- As an employee you must also be aware of issues associated with food safety and safe food handling practices that are relevant to your job. Food Safety Training conducted by a qualified staff member is mandatory. You must know how to recognize, prevent and alleviate food safety hazards. This position requires good working knowledge of the SQF code.
QUALIFICATIONS:
- A high school diploma or general education degree (GED) is preferred.
- · At least 6 months as an operator.
- · Ability to understand and follow a recipe.
- · Ability to understand and operate mixing process controls and makes adjustment when necessary.
- · Basic knowledge of dough mixing and operating mixing equipment.
- · Ability to comprehend scale and temperature readouts.
- · Ability to document mixing and ingredient data accurately and timely.
- Ability to write clearly and legibly and possess basic effective verbal and written skills in English.
