At Deluca’s our dough and preparation methods are the key to our success! As the backbone of the restaurant, our prep crew work tirelessly to ensure we only serve the highest quality of product. A prep cook at Deluca’s must have attention to detail, willingness to learn, and ability to grow.
Deluca’s Little Rock Dough & Prep Cook:
Must be able to take direction to ensure consistency of dough, and all aspects associated with Deluca’s menu
Must have relevant food prep experience in a professional kitchen (2 years or more)
Must be familiar with basic cooking techniques
Must have excellent time management skills and be able to work in a fast-paced environment
Possesses the ability to work on multiple projects or tasks at the same time
Must maintain a clean and sanitary working environment and station; ensuring the station, equipment and surrounding areas are cleaned and sanitized in accordance
with company standards and health code requirements
Follow proper opening and closing procedures and be to work on time, ready to work
Assist in checking in orders when assigned, ensuring the quality and quantity of product being received
Assisting with the cleaning of the kitchen to maintain a high level of cleanliness in all
aspects of the kitchen
Have a willingness to work as a team and help wherever necessary
Other job duties as assigned
Prerequisites
2 years experience in a restaurant environment
Acumen for consistency as it relates to recipe implementation
Ability to communicate with team members at all times, especially at busy times
Proficient knife skills
Proficient sauce preparation
Proficient at cleaning and portioning meats
Must have transportation

When Anthony Valinoti visited Hot Springs from Brooklyn, he knew he needed to live there and make Arkansas brick oven pizza using hand-made dough and fresh local ingredients. After starting on Park Avenue with six tables, Deluca’s recently moved to a larger downtown Hot Springs space, and has now partnered with the Keets of Petit & Keet and Cypress Social, James Beard Award Winning Chef, John Currence, and Mike Waldo of Waldo's Chicken and Beer, to open a second location at the newly revitalized Breckenridge Village in Little Rock.
