We are seeking an experienced and innovative Room Chef for our distinguished Koi Room at Seneca Niagara Casino. As the Koi Room Chef, you will lead all aspects of our Asian fine dining kitchen, from menu planning and recipe creation to ensuring the highest quality, taste, and presentation standards.
Key Responsibilities:
- Develop and curate a dynamic, appealing Asian fine dining menu, utilizing proven recipes and unique flavor profiles.
- Maintain meticulous quality and portion control, upholding the aesthetic presentation and freshness of each dish.
- Oversee a clean, safe, and compliant kitchen, in line with Seneca Gaming Corporation s standards.
- Manage budgeting, food costs, and labor expenses effectively, including payroll and administrative documentation.
- Establish food preparation and cooking standards, monitor cooking temperatures, and implement quality control measures.
- Lead staff training, guiding team members on cooking methods, plating techniques, portion control, and nutrient retention to ensure culinary excellence.
