About the Job
As a member of the senior management team, this position is instrumental in developing and fulfilling the short-term as well as long-term goals of the food and beverage operations. This position is responsible for creating an atmosphere that will inspire guest and team members to return. The below goals will be accomplished by the proper implementation, promotion, and success of our operations through continual evaluation of the products/services provided while ensuring effective training of the service teams. The individual will be responsible for controlling all Food and Beverage Inventory/Product. The individual will develop guidelines and goals within the structure of the budget, achieving results through prudent management techniques and cost controlling measures.
ESSENTAIL DUTIES AND RESPONSIBILITIES
include the following. Other duties may be assigned:
1. Will monitor food production on a daily and ongoing basis including (through close consultation with R + D Chef) development of menus and food promotions.
2. Follow recipe guidelines
3. Will maintain the highest standards of food quality and freshness.
4. Will maintain stated budgetary goals for food and labor costs and other kitchen expenses.
5. Will expedite line and monitor food quality and presentation so to maintain consistent and uniform quality level.
6. Will be thoroughly familiar with menu items including proper pronunciations of ingredients, preparation and condiments required.

8. Will assist other staff members with their duties as necessary.
9. Will maintain physical workspace to highest standards of cleanliness, including familiarity with all local, state and federal health codes and laws pertaining to kitchen area and to food storage and preparation.
10. Will assist in all food buying and sourcing.
11. Will represent the restaurant to all customers, purveyors, writers and others in a positive manner.
12. Will work staff positions as necessary.
13. Will work double shifts if required and as scheduled.
14. Will attend all scheduled staff meetings as required.
QUALIFICATIONS

Language Ability:
Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.
Math Ability:
Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, food cost, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Reasoning Ability:
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
Also to include the following:
1. Previous experience of at least 3 years leading a full service, high quality kitchen.
2. Demonstrated high level of proficiency in all aspects of food preparation and menu development.
3. Demonstrated high level of proficiency in all aspects of staff relations and training.
4. Demonstrated high level of proficiency in all aspects of budget development and ability to meet financial goals.
5. Able to be focused and decisive in fast paced situations.
6. Good physical condition in order to lift moderate weights, move quickly and remain on feet for prolonged long periods of time.
7. A sincere desire to provide utmost quality service.
8. Must be keen with attention to detail.
9. Well groomed appearance.
10. Possess a valid Health Department Food Handlers Card.
