KITCHEN MANAGER
The Kitchen Manager is responsible for the kitchen operations and staff and provides leadership and assistance to the General Manager. They are responsible for the ordering, receiving and preparation of food. They work with the General Manager to achieve objectives in costs, Team Member retention, food quality, cleanliness, and sanitation.
REPORTING RELATIONSHIP
The Kitchen Manager reports directly to the General Manager.
DUTIES AND RESPONSIBILITIES
* Arrives to work on time, ready to work, neat, and well-groomed, according to Company dress and appearance standards
* Understands completely all Company policies, procedures, standards, specifications, guidelines, and training programs
* Proactively handles all staff and guest concerns quickly, fairly, and with care
* Ensures that all food and products are consistently prepared and served according to the Corporate recipe and standards
* Maintains proper inventory of food items
* Reports all equipment problems and back of the house maintenance issues to the General Manager and Owner
* Has a working knowledge of food cost and how to affect it
* Schedules labor as required by anticipated business activity ensures that all positions are staffed as needed and labor cost objectives are met
* Manages staff performance with clear feedback, recognition, reviews, coaching/teaching, and discipline
* Knows each staff member's name and genuinely greets and interacts with them
* Identifies and develops staff members for future leadership roles
* Maintains outstanding restaurant appearance and sanitation
* Fully understands and complies with all regulations that pertain to health, safety, and labor requirements
* Holds self and staff accountable for attitude, behavior, results, and company standards/systems
* Works and communicated well with people of different backgrounds, experience levels, and personalities
* Knows menus completely and can teach staff to describe taste, preparation, and ingredients of food and beverage items
* Ensures that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant's preventative schedule for review by the General Manager
A strong candidate will possess the following characteristics:
* Minimum 21 years of age
* High school equivalency
* Previous supervisory and hospitality industry experience required
* Minimum of 2 years of kitchen management experience
* Proven track record of success as a kitchen manager
* Proficient communication skills in English (verbal and written)
* Proficient communication skills in the language of the kitchen staff
* Possesses excellent basic math and writing skills and has the ability to operate a computer or POS system
* Knowledge of Aloha skills would be beneficial
* Excellent customer service and interpersonal skills
* Must be Food Handler Certified
