About the Job
The Kitchen Manager serves on the leadership team as a forward-thinking partner and a guardian of two critical success factors: Customer Experience and Financial Stewardship. The manager's first responsibility is to the Customer Experience Manager and must have the ability to develop a collaborative team of high-performing team leaders, trainers, and team members who have complementary functional skills and creative strengths. This manager is responsible for food production processes in assigning positions, leading and training team leaders and team members, training and coaching kitchen trainers, clarifying roles, and evaluating and rewarding performance. This individual ensures a winning team by providing vision, planning, leading, organizing, and controlling kitchen operations with other managers to serve the restaurant's needs. They assemble a team that produces world-class food service through meeting quality requirements, LEAN processes, and continuous improvement. Also, this manager is responsible for ensuring the organization meets its ambitious goals for exceptional food safety, low food and paper costs, increased food quality, and diversity of team members.
The Kitchen Manager must:
- Be humble, have a hunger for wisdom, and be people-smart (emotionally intelligent).
- Be an expert in all Chick-fil-A breakfast, boards, machines, breading table and prep procedures, recipes, and requirements.
- Be extremely organized, have superior time management skills, and prioritize tasks in detail to ensure all responsibilities are completed on time, all the time.
- Combine critical thinking and practical leadership to create a culture of innovation
- Effectively communicate and have a proven ability to provide accountability across the entire organization.
- Work a minimum of forty hours per week in the restaurant.
- Serve and lead in normal restaurant operations to serve guests and each other.
Primary Duties and Responsibilities
Daily
- Lead in the normal operation of the business to serve guests.
- Leads the production team, with assistance from the Operations and Training Director, in the training and coaching of exceptional production leaders, team members, and production-certified trainers.
- Champions the highest Food Safety and Food Quality possible throughout the organization. Ensure assigned team members meet Chick-fil-A food safety and quality standards through procedures and requirements all day every day.
- Ensure area checklists, LEAN produce, and portion trackers are completed daily to standard.
- Monitor and make operational improvements based on data from Automated Holding Assistant (AHA) reports, Lean Chicken Entrees apps, and Lean Cold Item Entrees usage.
- Monitor Deliveries, Registers, Inventories, and Prep (all food preparation and production) to minimize Food and Paper Costs. (DRIP model)
- Communicate with all production team members/leaders our focus areas and priorities.
Weekly
- Allocate at least two hours per week to planning and reporting.
- Review Kanban Levels, Pre-Prep Levels, Thaw Cabinet Allocation, Automated Holding Assistant (AHA) reports and Inventory Activity report for trends and adjust training/procedures to minimize Food and Paper Costs.
- Monitors the Daily SAFE and eRQAs programs. Provides trend reports to the Leadership Team and spot reports for major hospitality and service-related issues.
- Develop action items and complete actions to address issues and strengthen competitive advantages.
- Keep kitchen always “Tour-Ready” in cleanliness and organization
- A key contributor and champion of our Lean and Continuous Improvement culture. Make One Small Improvement on the things that bug us. Document and sustain.
Monthly/Quarterly/As needed
- Set and achieve daily/weekly/monthly goals to improve processes, quality and food safety.
- Track development of junior leaders and team members to higher levels of leadership.
- Complete one eFSA quarterly and one mock ROE every six weeks.
- Assists in the on-going development, support, and performance evaluation of exceptional team leaders, training and members: a) Reinforce critical components of Employee Handbook. b)Ensure training plans are set for each team member correctly. c)Timely completes 30/60/90/365 evaluations for each team member
- Make updates to checklists.
- Communicate improvement ideas to Operator/Operations Director/Training Manager
- Assist in updating compelling and accurate job descriptions for all kitchen positions or roles
- Create, modify, implement and manage the restaurant kitchen plan, including:
- Standardization and continuous improvement of all Kitchen Standard Work roles and systems.
- Training plans for new and current team members
- Sales and Capacity forecasting and production systems adjustments

● Well prepared and trained newly hired team-members with in the first 60 days of employment
● All team members stay current in required training plans

Taste of Food, Order Accuracy, Speed of Service Scores
● Restaurant Operational Evaluation scores for Product and Production Environment in the Top 20% of the chain.
● Positive Food Cost Gap under 0.75%
