Job Summary
Manage the food and beverage operations of the resort to ensure the achievement of established quality standards and departmental revenue and profit goals. Adhere to local regulations concerning health, safety, compliance requirements, brand standards, and local policies and procedures.
Primary Responsibilities
- Business Planning & Measurement: Manage daily operations of the food and beverage sections. Inform the Director of Food and Beverage of major decisions and relevant information. Manage costs, inventory discrepancies, and direct labor to meet budgetary goals. Ensure quality and cost goals are met through proper storage, handling, preparation, and production. Assist in ordering and receiving supplies. Help set goals and develop strategies, procedures, and policies.
- Facilities: Ensure compliance with company and local sanitation standards in storage, production, and service. Maintain cleanliness and sanitation through effective use of sidework charts and maintenance. Manage POS and software systems. Control operating expenses like paper/plastics, cleaning supplies, and small wares.
- Human Resources/Payroll: Write and deliver performance reviews. Complete schedules and manage overtime. Conduct interviews for new applicants. Manage food safety and responsible alcohol service certifications. Work with Human Resources on manpower planning and management needs.
- Coaching: Oversee all food and beverage training. Work with Leads and Certified Trainers to ensure effective new hire training. Manage front-of-house service through servers and bartenders. Conduct teaching sessions and ensure high service standards. Hold pre-meal meetings with both FOH and HOH staff.
- Administration: Complete documentation for Worker's Compensation claims and disciplinary actions. Ensure timely processing of invoices and accounting documents. Conduct monthly inventory counts. Attend meetings as required by the Director of Food and Beverage or VP of Operations. Assume additional responsibilities as assigned by the General Manager.
Minimum Requirements
- Experience managing a team of food and beverage employees through motivation, coaching, and development.
- Proven experience supervising food and beverage service departments of 20+ employees.
- Knowledge and ability to control factors affecting budget.
- Proven excellence in customer service and effective interaction with guests, management, and associates.
- Self-motivated with a strong sense of responsibility.
- Ability to anticipate guest needs, multitask, and make quick decisions.
- Excellent written and verbal communication skills.
- Strong passion for teaching and learning.
- Proficiency with Microsoft Office applications.
- Capable of using independent judgment and solid decision-making skills.
