Job Summary:
Responsible for the successful operation of the beverage department, inventory control, ordering, receiving, organization and cleanliness of bars and storerooms, ensuring the appropriate par levels are established and maintained at each beverage venue and within the storerooms. The position is responsible for the successful execution of service-related operations within the established operational standards.
Essential Functions:
- Ensure compliance with the applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures.
- Ensure the highest possible standards of guest services by properly listening and responding to guest and team member concerns and questions.
- Ensure all beverage products served meet the established specifications and standards.
- Maintain certification for completion of training in Health Code Standards; teach, train and enforce practical application of all Health Code requirements at all bars and by all Beverage team members to ensure the responsibilities to Public Health and Safety are met.
- Responsible for the knowledge of all TABC laws, ordinance. Implementation of these requirements and ensure TABC certification of all staff.
- Ensure the proper level of service is provided based on forecasted needs.
- Work with other F&B management to ensure proper management and staff coverage at all times through effective, methodical scheduling and planning.
- Complete required daily financial tools and reports
- Work with Finance and IT to ensure that all revenues are captured and reported accurately.
- Track team member cash variances and ensure wage deductions are made in accordance with policies and procedures.
- Overnight inventory count in all bars to ensure that all bars are being properly maintained.
- Execute and audit beverage inventory and cost control systems and processes.
- Analyze and evaluate beverage department profits and loss statements and make recommendations as to alternative courses of action.
- With the Director of F&B and F&B Management team, direct the purchasing agent in matters pertaining to the purchase of products. Ensure all products necessary for beverage operations are ordered and delivered in a timely fashion.
- Respond immediately to any guest complaints to ensure that corrections are made, and that 100% guest satisfaction is met. Implement "Guest Recovery" as appropriate.
- Maintain a clean, sanitary, safe and comfortable environment for team members and guests; creating a positive work environment that fosters harmony and growth.
- Ensure that all bars and beverage equipment is operated safely and with reasonable care, reporting mechanical problems to the proper department for repair.
- Generate and track work orders as needed.
- Maintain high standards of sanitation and inventory organization.
- Responsible for the thorough inspection of all products as they are being stored and rotated.
- Ensure proper stock storage location on shelving units.
- Store inventory in proper designated location with a focus on organization, sheet to shelf system and stock rotation.
- Ensure completion of paperwork in a timely manner including submittal of invoices and inventory.
- Record purchases and issues of beverage related supplies to the bars on a daily basis.
- Maintain a perpetual inventory system. Maintain assigned par levels of product in storerooms and at the bar locations.
- Develop procedures to improve accountability.
- Assist with beverage transfers, orders and special requests.
- Ensure work area is clean and free from debris and ensure that proper supplies are sufficient on a daily basis.
- Assist Beverage Inventory Clerks in the ordering process update costing information in inventory spreadsheets.
- Work with the Manager and Food and Beverage Assistant Director on negotiating prices and vendor specials.
- Responsible for the temperature control points at cooler and storage locations.
- Receive and inspect the beverage and resulting invoices to ensure beverage quality is up to casino specifications and the facility is being appropriately charged.
- Ensure that the casino, property and departmental goals are identified, achieved and positive results are maintained.
- Through coaching, teaching and training, lead Beverage Department personnel in the proper performance of their duties; leading by positive example at all times. Document these actions as necessary.
- Set performance expectations and provide coaching and operational support of the staff.
- Ensure that all Beverage staff and Supervisory members are presented with timely, honest and effective evaluations.
- Demonstrate and promote KLECH core values and guest service skills
- Manage and maintain security of confidential information entrusted to position.
- Attend and satisfactorily complete all required training as assigned.
- Monitor compliance with Federal currency transaction reporting requirements, Title 31 requirements and IRS Currency Transaction Reports and property established Anti-Money Laundering policies. Maintain accurate MTL, MIL, CTR and SAR as needed.

Minimum Requirements to Qualifications:
- Must have High School Diploma or GED.
- Minimum of two (2) years operational experience in free-standing restaurant, bar and/or F&B department; multi-venue/unit experience a plus.
- One-year Supervisory experience in a fast-paced, high volume environment.
- Must obtain and maintain TABC certification.
- Must have ability to use Microsoft Office programs.
- Must have working knowledge of all aspects of beverage operations.
- Demonstrated ability to excel in situations which require complex decision making, including anticipating, preventing, identifying and solving challenges as necessary.
- Able to understand and evaluate complex information, data, financials, scheduling, succession planning, Team Member evaluation, etc. from various sources to meet appropriate objectives.
- Strong communication skills in English both written and oral. Spanish or other language skills a plus.
Other Criteria:
Qualified Kickapoo Traditional Tribe of Texas Members and qualified Native American preference is observed.

Physical Demands:
- While performing the duties of this position, the team member is regularly required to stand, sit, walk, push, pull, bend for extended periods; reach with hands and arms; talk and listen on a regular basis.
- The team member must be able to concentrate for prolonged periods.
- Specific vision abilities required by this job include close vision, distance vision, peripheral vision and depth perception.
- The team member must be able to communicate effectively in person or using telecommunications equipment.
- The team member must have the hand-eye coordination and manual dexterity to operate a keyboard, touch-screen display, telephone and calculator.
- Frequently lift and/or move up to 50 lbs.
Work Environment:
- Normal office setting and casino floor.
- Frequent walking and standing in a smoke filled environment and frequent contact with the general public.
- Temperature controlled environment with varying noise levels. May be exposed to high levels of noise throughout the day.
- Extended hours and irregular shifts may be required including nights, weekends and holidays.
- Must be able to perform under pressure and work long hours under stressful conditions.
- May be exposed to the risks associated in attempting to resolve issues with difficult guests and extremely irate staff members.
- May be exposed to various types of lighting including, but not limited to: artificial fluorescent lights, flashing lights, strobe lights, multiple colored lights, etc.
- Travel may be required to perform one or more essential functions of this position.
Conditions of Employment:
- Must be able to obtain and retain a KTTT Gaming Commission License, including successful completion of background check necessary to obtain and maintain license. Responsible to keep all documents current and valid at all times.
- Must be able to provide authorization to work in the United States.
- Must be at least 18 years of age.
- Must have access to reliable transportation to commute to and from work.
- Must comply with KLEC handbook, internal policy and procedures, and gaming regulations set within KLEC.
