At our organization, we take pride in our day-to-day operations and the collaborative relationships we've built in Napa Valley to ensure the finest quality in our wines each vintage. As we integrate into a larger entity, we are excited to expand our Hospitality & Culinary team and are currently seeking an Executive Sous Chef to join our dynamic group.
This role presents a unique leadership opportunity to be part of an exciting transformation period as we develop our inaugural culinary program. We're preparing to unveil a fully renovated, unparalleled hospitality experience with the opening of our new Estate tasting room along the Silverado Trail. In addition to our renowned wines, our property will feature elevated pairing menus and bespoke culinary offerings crafted in collaboration with a Michelin-starred Restaurant's Chef Team.
Reporting to the Director of Hospitality and working closely with the Culinary Director, the Executive Sous Chef will oversee all culinary programs. This includes leading lunch-style pairing menus for the tasting room, managing special events, maintaining local chef garden areas, and other culinary-based initiatives. The Executive Sous Chef will ensure that all recipes, food preparations, and presentations meet our standards of quality and seasonality.
Key Responsibilities:
- Lead the Culinary team through the grand opening of our Estate
- Oversee the opening of culinary operations, including sourcing items and establishing kitchen setup and sanitation standards
- Contribute to the development and execution of private and public events
- Recruit, onboard, and train kitchen staff
- Provide strategic leadership through mentorship and effective communication, enforcing company policies and procedures
- Collaborate with hospitality departments, regional support staff, and production teams
- Manage local vendor relationships to maintain our commitment to fresh, locally sourced ingredients
- Develop seasonal dishes and potentially establish a chef's garden
- Assist in procuring local produce and culinary supplies
- Create recipes and menus for food and wine pairing experiences
- Establish SOPs for culinary operations
- Manage department budget and control costs
- Drive innovation in revenue, food, and service
- Ensure compliance with health and sanitation regulations
- Maintain kitchen equipment and restaurant facilities
Qualifications:
- 3+ years of fine dining management experience
- Demonstrated success in a fine dining environment with industry accolades
- Culinary or relevant training preferred
- Serve Safe Certification desired
- Proven track record in team management and development
- Strong communication skills; bilingualism is a plus
- Familiarity with kitchen training and operations
- Knowledge of health and sanitation regulations
- Basic computer skills
- Ability to interact with guests professionally
- Experience in food ordering and procurement
- Efficient, organized, and focused work ethic
- Creative and integrity-driven approach
