Description
We are seeking an Executive Sous Chef to oversee kitchen operations, ensuring the preparation and presentation of high-quality dishes. This individual should possess leadership, creativity, and management skills, while maintaining a strong focus on the kitchen's efficiency, cleanliness, and overall performance.
Leadership:
- Assist the Executive Chef in the overall management of kitchen operations, including overseeing food preparation, cooking, and presentation.
- Lead and supervise kitchen staff, ensuring they perform their duties in an efficient and professional manner.
- Ensure the kitchen operates smoothly during service, maintaining an organized and clean environment.
- Lead by example, maintaining high standards of organization, cleanliness, and professionalism.
Menu Development & Food Quality:
- Collaborate with the Executive Chef on menu planning and development, including creating new dishes, specials, and seasonal items.
- Ensure consistency in food quality, presentation, and portion control.
- Monitor the preparation of food, ensuring that each dish is executed to perfection and meets the restaurant's high standards.
Inventory & Cost Management:
- Manage inventory levels and coordinate with the Executive Chef and purchasing team to order supplies and ingredients.
- Help maintain food cost control by monitoring waste, portioning, and proper storage techniques.
- Ensure all food products are rotated and stored properly, minimizing spoilage and waste.
Training & Development:
- Provide leadership and mentorship to kitchen staff, including training, development, and performance evaluations.
- Ensure that staff is knowledgeable about food safety, preparation techniques, and the restaurant’s standards.
- Foster a positive, collaborative work environment that encourages teamwork and growth.
Food Safety & Sanitation:
- Ensure that the kitchen complies with all food safety regulations, health standards, and cleanliness procedures.
- Regularly inspect kitchen areas to ensure safety, sanitation, and proper equipment functioning.
- Oversee the cleaning and maintenance of kitchen equipment, utensils, and workstations.
Event & Service Coordination:
- Assist in the coordination of large events, banquets, or catering orders, ensuring that food preparation aligns with the event’s schedule and guest expectations.
- Work closely with front-of-house staff to ensure a seamless dining experience and timely food delivery.
Qualifications:
Experience:
- Proven experience as a Sous Chef, Executive Sous Chef, or in a similar senior kitchen position, preferably in a fine dining or upscale restaurant.
- Strong culinary background with advanced knowledge of cooking techniques, kitchen management, and food preparation.
Skills:
- Exceptional leadership and team management skills.
- Excellent organizational, multitasking, and problem-solving abilities.
- Strong communication skills and ability to work collaboratively with both kitchen and front-of-house teams.
- Ability to work efficiently under pressure while maintaining quality and consistency.
- Proficiency in inventory management, cost control, and food safety standards.
Certifications:
- Food safety certification (e.g., ServSafe) is required or must be obtained shortly after hire.
