Job Summary



As the Executive Chef, you will lead the culinary team in a supportive and encouraging environment. Located in Carpinteria, CA, you will be part of a world-class team delivering exceptional meals. Ideal for an ambitious culinary professional who is looking to grow and make an impact.


Key Responsibilities:



+ Plan regular and modified menus closely following established guidelines.


+ Follow standardized recipes, portioning, and presentation standards. Complete and apply daily production worksheets and waste log sheets. Taste completed meals to ensure quality.


+ Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on company and regulatory standards.


+ Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas. Ensure that kitchen staff follows and completes schedules as assigned.


+ Maintain inventory of food and non-food supplies within established guidelines while ensuring necessary products are available.


+ Make all decisions regarding the utilization of leftover food products within company guidelines.


+ Align with federal, state, and local health and sanitation regulations as well as department sanitation procedures.


+ Follow facility, department, and company safety policies and procedures.


+ Participate and attend departmental meetings, staff development, and professional programs as appropriate.]



Preferred Qualifications:



+ A.S. or equivalent experience.


+ 5+ years of progressive culinary/kitchen management experience.


+ Extensive catering experience a plus.


+ High volume, complex food service operations experience.


+ Institutional and batch cooking experience.


+ Hands-on chef experience.


+ Comprehensive knowledge of food and catering trends, with a focus on quality, production, sanitation, food cost controls, and presentation.


+ Proficiency with computers, including Microsoft Office (Word, Excel, and PowerPoint), Outlook, and the Internet.


+ Willingness to participate in client happiness programs/activities.


+ ServSafe certified - helpful.
