JOB SUMMARY: The purpose of this position is to provide expert advice to facility staff to establish and maintain systems that are effective and efficient to operate the dietary department and provide food service to residents in a cost-effective, efficient manner to safely meet residents needs in compliance with federal, state and local requirements.
RESPONSIBILITIES AND MAJOR DUTIES:
1. Develop or recommend a current diet manual to meet the needs of the residents.
2. Assess and document the nutritional needs of each resident in accordance with the resident comprehensive assessment and care plan.
3. Review and plan all regular and therapeutic diets and menus.
4. Approve all permanent menu substitutions.
5. Counsel residents regarding dietary likes and dislikes, appetite, food habits and therapeutic menus.
6. Assess and document residents food allergies and cultural backgrounds that may affect food consumption. 7. Evaluate and make recommendations regarding the serving time of meals, sanitation and food handling procedures.
8. Evaluate and make recommendations regarding food service equipment.
9. Evaluate food based on nutritional adequacy, method of preparation, taste, appearance, serving temperature and portion size.
10.Assist Dietary Manager in adjusting recipes for desired yield.
11.Develop and maintain an established method for ordering food and dietary supplies.
12.Act as a liaison between dietary department and residents.
13.Plan and conduct in-service training programs for food service employees, nurses and nursing assistants. 14.Evaluate and make recommendations for adequate staffing of the Dietary Department.
15.Observe infection control procedures.
16.Ensure the Resident Assessment Instrument (RAI) process is followed in accordance to State & Federal Guidelines.
17.Follow Residents Rights policies at all times.
18.Adhere to all facility policies & procedures and ensure they are adhered to by all responsible parties and carry out disciplinary action for non-compliance as appropriate.
19.Ensure adherence to the Corporate Integrity Program and the Performance Expectations at all times. 20.Perform other related duties as directed by the Administrator and/or person of authority.
EDUCATION AND EXPERIENCE Bachelor s Degree in Dietetics or related field required. Registered as a Licensed Dietitian required. 1 year of experience as a Dietitian in a long term care setting preferred. Previous experience leading and managing a team of dietary professionals preferred.
LICENSURE, REGISTRATION, COMPLIANCE CHECKS AND/OR CERTIFICATION Certification as an Activities Professional preferred. Successfully complete &/or comply with all required background checks to include but not limited to: Ohio BCI&I fingerprint analysis, FBI (if applicable) fingerprint analysis, Nurse Aide Registry, HHS/OIG list of Excluded Individuals/Entities (LEIE) & Ohio Medicaid Provider Exclusion and Suspension List. Dietitian as required in the state. Dependable transportation required.
RESPONSIBILITY FOR PATIENT CARE Provide services based on physician orders. Communicate physician, patient and family needs with the appropriate caregivers.
COMPUTER Intermediate personal computer skills including electronic mail, routine database activity and word processing.
LEADERSHIP RESPONSIBILITIES Assist with the direction and management of the dietary team within assigned facility(s).
RESPONSIBILITY FOR CONFIDENTIAL MATTERS Works regularly with some information such as medical records or reports, financial reports, information on computer screens or other electronic devices, and records that are restricted to specific persons. Must comply with confidentiality policy. _________________________________________________________________________
ENVIRONMENTAL AND WORKING CONDITIONS May be exposed to heat and cold in all weather conditions. Works regularly under desirable conditions with little or no disagreeable features. Distractions are frequent.

AGE GROUP AND ABUSE GUIDLINES Primarily engages with adults and the elderly. Knowledge of the physical, social, emotional, and intellectual needs of adults and the elderly will be helpful. This includes being able to detect abuse with regard to state regulations. Follows policy for reporting abuse.
