Dietary Manager
Certified dietary manager provides technical direction to facility personnel in the development of systems, capabilities, and practices in order to comply with all pertinent food regulations and company procedures.
Certified Dietary Manager Duties & Responsibilities
• Order, prepare, and serve meals that are palatable and appetizing in accordance with portion control procedures, for therapeutic diets in accordance with scheduled menus and sanitary regulations
• Complies with all regulatory agency standards, including federal, state and accrediting agencies adheres to community confidentiality, HIPAA regulations, and resident rights policies
• Monitor meals
• Inspect special diet trays to ensure accuracy, portion control, appealing layout, and evaluate kitchen and dietary area for upkeep, supply control, cleanliness and safety
• Complete forms, reports, evaluations, studies, to ensure control of equipment and supplies
• Determines quality and quantity of food required, plans menus and controls food costs
• Maintains appropriate documentation in resident medical records
• Develops and directs cost control system
• The position will include working some weekend and holiday rotations
• Provides management and supervision of food services managers and dietary staff (recruitment, scheduling, payroll functions and ongoing training)
