Position: Culinary Manager, Franciscan Kitchens (Full-Time)
Location: Franciscan Kitchens – 242 South 8th Street, Newark, NJ
Reports to: Director, Franciscan Charities
Salary: $40,000 - $45,000 annually for 35 hours per week
About Franciscan Charities, Inc.: Franciscan Charities, Inc. is a not-for-profit organization located in Newark, New Jersey. The mission of the organization since its inception in 2004 is to provide assistance and support to those in need who reside in the Central and West Wards of Newark. Franciscan Kitchens is the centerpiece of the organization’s outreach to those in our community. Every year the organization, with help of dedicated staff and volunteers, provides approximately 100,000 hot, nutritious meals to individuals and families who live in our community. Franciscan Kitchens is the hub for the organization’s social services programs such as our ID assistance program and client advocacy for housing, jobs and other family services.
Summary of Position Responsibilities:
- Oversee and participate in all aspects of food preparation (cooking, etc.) and production in the kitchen, including supervising the chef, staff and volunteers
- Develop updated and varied menus, taking into consideration dietary restrictions and food/season availability
- Ensure high-quality food presentation
- Manage inventory and order or purchase food from designated organizations such as the Community Food Bank of New Jersey, Restaurant Depot, and MEND. Pick-up orders or purchases using the company van
- Maintain clean and organized kitchen in compliance with health and safety regulations
- Collaborate with Company leadership to develop new dishes, and implement process improvements
- Prepare reports
- Handle other duties as assigned
Required Skills/Abilities
- Previous experience as a chef, sous chef or similar role in a catering, restaurant or institutional operation
- Strong knowledge and experience in menu planning, kitchen management and food production
- Thorough understanding of food handling and sanitation standards; ServSafe certification
- Excellent verbal and written communication skills
- Excellent interpersonal, collaboration and client relationship skills
- Ability to function in a fast-paced environment
- Possess a valid driver’s license
