Job Summary
The Culinary Director role supports the overall operational and financial success of the Food Program at national Compass sites. Trains and supports all operators with strategy, alignment and improving productivity. Makes executive decisions affecting the operation, following The Client’s culture and guidelines, the Health Department’s regulations and Compass’ standards and expectations of food quality, freshness and presentation.
POSITION OBJECTIVES:

Major Duties
Food Programs
Supports the culinary teams in developing high quality food programming at all sites
Ensures that all Bon Appétit food standards are followed.
Works with all Site Leads to ensure sites adhere to Client expectations of culinary guidelines, metrics and guest hospitality standards
Supervision and Development of Staff
Directly supervises Executive Chef
Promotes the Open Door Policy, ensuring the highest level of communication and understanding between all staff.
Handles staff conflicts or performance issues immediately, documenting coaching, counseling and/or disciplinary actions.
Discusses with the VP of Strategic Operations any areas of concern and/or performance issues. Provides the VP of Strategic Operations with action plans and timelines for resolutions.
Financial Management and Analysis
Follows Bon Appetit requirements as outlined in the Accounting Manual.
Supports weekly and monthly financial analysis of all sites for review by the National Team explaining variances to the budget.
Reviews weekly paperwork, signing off on the Sites’ financial package.
Works with site Executive Chefs on inventory control
Creates and keeps an up-to-date Operation Manual per Client Food Program guidelines
Safety and Sanitation
Adheres to Health Department codes and OSHA and ADA regulations.
Supports Sites with the development of the Safety Program for consistency nationwide
Customer Service and Client Relations
Treats all guests and staff with care and respect.
Handles guest complaints immediately and professionally, putting the guest at ease and resolving the issues to their full satisfaction.
Reviews and responds to Food Program concerns or inquiries in a timely manner; escalates to VP of Strategic Operations when required
Retail Management
Tours Sites when needed
Edits daily signage for correct spelling, descriptions and pricing.
Supports marketing, advertising and promotions.
Supports and contributes to updating of menu ideas and concepts with Site Executive Chefs
Overall Management
Teaches Bon Appétit philosophy and culture, emphasizing food made from scratch, friendly and attentive service and a safe and clean environment
Supports management decisions while promoting a team spirit.
Performs any duties as assigned by the General Manager and/or Corporate Management.

Qualifications

Education: Minimum of four (4) years college education, bachelor's degree in Hotel/Restaurant Management preferred.
Experience: Previous hotel-related experience, progressive management experience in food and beverage operations, minimum of 3 years supervisory experience.
Able to speak clearly and listen attentively to staff, peers, supervisors, guests and Client.
Has a computer skill with a working knowledge of Microsoft Word, Excel and PowerPoint.
Strong passion for great food.
General culinary knowledge of basic kitchen practices, protocols and procedures.
Ability to follow all Bon Appétit Health & safety standards.
Position requires 25% of travel.
