Director of Food and Nutrition Services (Culinary Manager)

Responsibilities
- The Manager of the Culinary Department is able to learn to perform and often performs the job assignments of the dietary aide, cook, and dishwasher positions and, as such, is able to operate, and teach others how to operate, a variety of industrial kitchen equipment.
- The Culinary Manager may perform and lead small groups of line staff in food preparation, serving and clean-up activities on varying shifts as needed.
- The Culinary Manager must be able to quickly learn policies and procedures, and federal/state requirements such that they may assume the responsibility of and manage and supervise the dietary staff at a single site.
- The Culinary Manager must effectively handle the culinary departments managerial responsibilities as well, including but not limited to; payroll submission; interviewing, hiring, training culinary staff, staffing patterns; effective coaching and discipline; menu management purchasing; maintaining inventory and budgeting.
- The Culinary Manager assists in providing leadership, support and guidance to ensure that food quality standards, inventory levels, food safety guidelines and customer service expectations are met.
- The Culinary Manager provides ongoing training, quality control and in-servicing of culinary staff on roles/ responsibilities.
- The Culinary Manager must conduct themselves in a professional manner and help ensure that line staff do the same.
Qualifications (One of the following requirements for Position)
- Education:
- Certified Dietary Manager (CDM)- If not currently certified, complete certification or meet one of the other listed education requirements.
- A certified dietary manager; or
- A certified food service manager; or
- Has similar national certification for food service management and safety from a national certifying body; or
- Has an associate’s or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning; or
- Meets state requirements for food service managers or dietary managers
- Ability to understand and follow instructions in English, communicate effectively, perform simple arithmetic, and understand measurements and conversions
- Prefer previous experience in nursing facility home food & nutrition services preferred, but not required
- Ability to plan, organize culinary department to meet the needs of our military veterans and set up trays and plates in accordance with diet orders, likes/dislikes and interpret specifications and standards
- Ability to work in close cooperation with veterans/residents, guests, visitors, families, supervisor and peers. Requires empathy for our disabled veterans
