Overview:
This position is under the guidance and direct supervision of the PACE Care Center Supervisor. The Food Preparation Coordinator will have direct responsibility for the coordination of all food services, including breakfast and lunch preparations, home meals, center snacks, and special events. Responsible for overseeing the daily duties of the kitchen staff, maintains records required for Food Safety and Sanitation, and Child and Adult Care Food Program (CACFP) and ensures that all food preparation meets the standards and regulations.
Responsibilities:- Coordinates all food services including breakfast and lunch preparations, home meals, center snacks, and special events.
- Order all foods for breakfast, snacks, and lunches from food vendor and other suppliers.
- Order and maintain stock of supplemental oral feedings and snack/emergency food supplies.
- Supervise special diet requirements, which includes diet texture & fluid consistency modification, and therapeutic diet e.g., pureed, chopped, low salt, etc. and assures that individual nutrition plans is followed.
- Prepare and update special diet lists or logs and ensure that modified diets are correct and adaptive feeding equipment provided.
- Maintains the nutritional supplement list and ensures appropriate distribution to participants.
- Receive, test, prepare and serve catered breakfast and lunches.
- Coordinate the preparation of meal plates and snacks for distribution to participants in the PACE Center.
- Ensure that the day floor set-up, preparation of meal plates and snacks, serving of meals and daily cleaning is complete.
- Assist in the preparation of the meal delivery ticket form.
- Provides direction to Personal Care Attendants who are assisting with food preparation and serving.
- Maintains cleanliness and order in kitchen and food supply areas. Ensures cleanliness of refrigerators and freezers. Completes weekly cleaning log. Brings special cleaning needs to attention of the PACE Care Center Supervisor, or other responsible staff.
- Maintains inventory and ordering of food and other related supplies, including emergency food supplies. Informs PACE Care Center Supervisor, and Dietitian or other responsible staff of any issues with inventory.
- Monitor and record daily refrigeration temperatures and other operational logs, and label food as needed.
- Monitors expiration dates, rotation and storage of food to ensure all food products are with correct labels and date as per policy guidelines.
- Ensures proper safety techniques in food handling and serving.
- Maintain records of meals served, participant lists, nutrition records, and other required reporting for Food Safety and Sanitation and CACFP.
- Oversee the daily duties of the kitchen staff and ensures all food preparation standards and regulations are met.
- Assists in the training of the Personal Care Attendant in performing dietary tasks in the kitchen.
- Attend meeting and training routinely and as needed.
- Perform all other related duties as assigned.
- Food Safety Manager Certificate.
- Current Valid BLS Certification.
- Bilingual: English/Spanish/Mandarin/Cantonese depending on location preferred.
- A minimum of two years’ experience working in any capacity in the Food Preparation department required; with the elderly population and their families preferably, in a community agency or health care setting preferred.
- A minimum of one year of experience in leading kitchen services preferred.
