Position Summary:
Under general supervision, supervises and oversees the kitchen and trains staff; plans and prepares nutritious, well-balanced meals. Maintains cleanliness of food preparation areas, kitchen, utensils and equipment.
The work is normally reviewed upon completion, with occasional spot checks while in process, to ensure accuracy, timeliness and conformance to established standards; major work tasks are covered by instructions or procedures and unusual situations are referred to a supervisor.
Essential Duties and Responsibilities: (Depending on area of assignment, incumbent may not be required to perform some of the duties listed below.):
- Leads and trains cooks, prepares, cooks and serves meals and cleans kitchen and dining area.
- Plans and prepares well-balanced, nutritious meals and snacks according to established policies, procedures, and nutritional guidelines.
- Prepares and adheres to weekly menus, including documenting any substitutions to the menus.
- Stores, labels, and dates food properly.
- Submits monthly food reports, daily meal counts, and food service reports on a timely basis.
- Orders food and foodservice related items to ensure that adequate supplies are available at all times.
- Ensures safety guidelines and other applicable procedures are applied in the food preparation and dining areas.
- Maintains a safe and healthy environment in accordance with established policies, procedures, and regulations.
- Inspects kitchen to ensure safety measures are practiced continually.
- Cleans and sanitizes kitchen and dining areas.
- Washes and dries pots, pans, eating utensils, and other cooking equipment.
- Ensures the safe usage and security of culinary equipment.
- Ensures timely delivery of prepared food products.
- Performs other job related duties as assigned and contributes to a team effort.
Knowledge, Skills, and Abilities:
- Knowledge of the Tohono O'odham culture, customs, and traditions.
- Knowledge of applicable federal, state, tribal laws, regulations and requirements.
- Knowledge of how to prepare well-balance and nutritious meals.
- Knowledge of proper and safe food handling, storage, and disposal requirements.
- Knowledge of methods and procedures of quantity food preparation; kitchen sanitation and safe food storage practices.
- Knowledge of use and care of cooking equipment and utensils; kitchen safety and basic math.
- Skill in preparing food for large groups of people.
- Skill in handling sharp knives, and other cutting utensils.
- Skill in providing superior customer service to external and internal customers.
- Ability to safely operate various cooking equipment and kitchen appliances.
- Ability to lead and kitchen staff.
- Ability to work extended hours and various work schedules.
- Ability to communicate efficiently and effectively both verbally and in writing.
- Ability to establish and maintain positive and effective working relationships with other employees and the general public.
- Ability to maintain privileged confidential information.
Minimum Qualifications:
High School Diploma or General Education Diploma and three years' work experience in food preparation.
Licenses, Certifications, Special Requirements:
- Must obtain certifications in Cardio Pulmonary Resuscitation (CPR), Automated External Defibrillator (AED) and First Aid within the first six months of hire.
- Food Handler's card must be obtained within six months after hire.
- Upon recommendation for hire, a criminal background and National FBI check is required to determine suitability for hire, including a 39-month Motor Vehicle Record.
- May require possessing and maintaining a valid driver's license, (no DUIs or major traffic citations within the last three years).
- If required, must meet the Tohono O'odham Nation tribal employer's insurance requirements to receive a driver's permit to operate program vehicles.
- Based on the department's needs, incumbents may be required to demonstrate fluency in both the Tohono O'odham Language and English as a condition of employment.
