As the Cook in the Banquet Kitchen, you will assist the Chef and supervisors in heavy production, fabrication, and preparation of food products for Banquets. You will also be responsible for maintaining cleanliness and sanitation throughout the kitchen based on Health regulations and requirements. You should maintain a passive leadership role in maintaining adequate production level form the Kitchen staff. As the Cook in the Banquet Kitchen, you will exemplify La Cantera Resort and Spa culture while working to provide exceptional service to both internal and external guests at all times. Essential Job Funcations:
• Assuming the duties of the appropriate Kitchen Department heads in their absence.
• Communicating daily with the Chef on Duty for job assignments.
• Producing and fabricating food products daily for the Dining Room, Fine Dining Room, cafeteria, and banquets.
• Maintaining a high level of sanitation and safety in the Kitchen area.
• Possessing knowledge of all Kitchen hardware and their functions for use in breakdown and cleaning.
• Dating all fabricated food items before storage.
• Utilizing all trimmings, and excess of unused portions of fabricated food items.
• Assisting the Chef on Duty with banquets and/or conference dining dishes out for food service.
• Adhere to the policies of the Resort as outlined in the Employee Handbook and report any observed violations to Human Resources.
• Maintain the highest level of employee/guest relations.
• Maintain a good working relationship with all Departments.
• Active Food handler’s certification
• Must be willing to work a variety of day/night and weekend shifts
• Requires strong organizational skills
• Must be able to work independently
• Able to be on your feet for long periods of time
• Able to lift at least 50 pounds
• Have a desire to exceed expectations
