Job Overview:
The Executive Chef III - Concessions at Hard Rock Stadium will be responsible for leading all culinary operations within the stadium's concessions areas, including high-volume food service during major events such as NFL games, concerts, and other large-scale events. This senior position requires an experienced and innovative culinary leader capable of managing large kitchen teams, developing diverse and high-quality menus, controlling costs, and ensuring exceptional guest satisfaction.
The Executive Chef III will oversee the preparation and presentation of food for various concession stands, suites, VIP areas, and portable food stations throughout the stadium. In addition to leading the team, the Executive Chef III will ensure the highest standards of food quality, safety, and efficiency, while collaborating with both back-of-house and front-of-house teams to deliver an outstanding guest experience at all events.
Key Responsibilities:
- Oversee all food production and culinary operations within Hard Rock Stadium's concessions area, ensuring high-quality food service during every event.
- Create, develop, and manage innovative and profitable menus tailored to different event types and guest preferences, including diverse options for dietary needs (e.g., vegetarian, gluten-free, allergen-friendly).
- Monitor and ensure consistency in food quality, freshness, and presentation across all food service areas.
- Oversee food preparation processes, ensuring that food is produced on time and in high volumes, especially during peak event times.
- Ensure all kitchen operations comply with health and safety standards, including local health codes, food safety regulations, and sanitation protocols.
- Lead, manage, and train a large culinary team, including chefs, cooks, kitchen staff, and supervisors, across multiple concession stands and food service areas.
- Develop and manage the food cost budget, including the efficient use of labor, food, and supplies, with a focus on maximizing profitability without sacrificing food quality.
- Analyze sales and consumption patterns, adjusting menus and inventory to optimize food and beverage offerings and minimize waste.
- Work closely with the stadium's event management and operations teams to plan and execute food service for a variety of events, ensuring that menus are aligned with the event and guest demographic.
- Act as a leader and problem solver on event days, ensuring quick resolution of customer complaints and addressing issues as they arise.
- Innovate and implement creative concepts to enhance the guest dining experience, focusing on unique offerings for special events or VIP areas.
Qualifications:
- Culinary Arts degree or equivalent experience in a high-volume, large-scale food service environment.
- Experience with both back-of-house kitchen operations and front-of-house guest service in high-pressure, fast-paced environments.
- Exceptional leadership and team management skills, with the ability to motivate, develop, and lead a diverse team.
- Extensive experience in high-volume food preparation, menu development, and catering for large events.
- Knowledge of food safety standards and regulatory compliance.
- Strong communication and interpersonal skills, with the ability to collaborate across departments and manage multiple stakeholders.
- Ability to innovate and adapt to evolving food trends, guest preferences, and event needs.
Hours may be extended or irregular to include nights, weekends and holidays.
