SUMMARY:
The Chef Tournant is a highly skilled culinary professional responsible for rotating between various kitchen stations to support the culinary team in ensuring the smooth operation of the kitchen. This position requires the ability to work in multiple stations (such as sauté, grill, and pastry), handle food preparation, cooking, and plating, while maintaining quality, consistency, and safety standards. The Chef Tournant also helps guide junior kitchen staff, providing leadership and mentorship as needed.
RESPONSIBILITIES:
- Station Rotation: Rotate between various kitchen stations (e.g., grill, sauté, pastry) based on operational needs, ensuring high levels of service and product quality.
- Food Preparation & Cooking: Prepare and cook dishes according to recipes and restaurant standards, ensuring consistency, taste, and presentation.
- Team Leadership: Support and mentor junior kitchen staff by offering guidance, sharing culinary techniques, and helping maintain high standards of work performance.
- Inventory & Ordering Support: Assist in managing inventory, keeping track of stock levels, and ensuring timely ordering and receiving of ingredients.
- Quality Control: Monitor the quality of all dishes served to ensure they meet the restaurant's standards for taste, presentation, and safety.
- Health & Safety: Ensure all kitchen operations comply with health, sanitation, and safety regulations. Maintain cleanliness in all kitchen areas.
- Menu Support: Assist with menu development, including testing new dishes and contributing creative ideas for special dishes or seasonal menus.
- Communication: Maintain clear communication with the kitchen team and front-of-house staff, ensuring smooth service and resolving issues as they arise.
- Problem Solving: Address issues in the kitchen (e.g., equipment malfunctions, product shortages, or delays) promptly and effectively.
- Scheduling of all hourly staff, manage their schedule.
- Labor control Adp, hours of all hourly staff.
- Lead the Kichen to the higher standards.
- Ensure all logistics of the operation are done such as prep list, order guides, recipe books, health department.
QUALIFICATIONS:
- Minimum of 3-5 years of experience in a high-volume, professional kitchen, with at least 1-2 years in a supervisory or leadership role
- Strong knowledge of culinary techniques, kitchen operations, and various cooking methods.
- Proficient in knife skills and kitchen equipment handling.
- Ability to work in a fast-paced environment and manage multiple tasks simultaneously.
- Leadership abilities with the capacity to guide, train, and support kitchen staff.
- Excellent communication and organizational skills.
- Ability to maintain composure during busy service hours and under pressure.
EDUCATION:
- A high school diploma or equivalent is required.
- A culinary degree from an accredited institution or equivalent experience is preferred.
LANGUAGE SKILLS:
- Excellent verbal and written communication skills in English and Spanish (preferred).
REASONING ABILITY:
- Excellent verbal and written communication skills, with the ability to interact effectively with guests, associates, and external partners.
- Ability to work well under pressure and respond quickly and effectively to emergencies.
