Pennybyrn has an amazing opportunity for a full-time Cafe' Chef.
Pennybyrn is a retirement community with an array of fine dining establishments on campus. Our residents and guests enjoy Hennessy's Restaurant, the Irish Pub and Grill, and the Cafe'/Bistro, which serves lighter fare and comfort food. Pennybyrn's menus are ever-changing and high quality, as excellent dishes are expected.
The Café Chef will assist in the day-to-day operations of the Cafe' kitchen, dining room, and events. This position performs duties as a working Chef directly with cooks, prep cooks, utility staff, and wait staff to ensure all work is completed. This position strives for the highest customer satisfaction, plans and prepares delicious, high-quality dishes, holds direct responsibility and leadership over the production of food for the Café, and ensures the health and safety of the kitchen facilities and staff. The Café Chef strives to keep staff morale at the highest level while leading by example within a professional environment.
This position is directly responsible for the coordination of purchasing inventory, control of food, creation of menus, and labor and supply costs for the Café. As needed, may also be responsible for the Main Kitchen’s purchasing inventory, control of food, and labor and supply costs.
The ideal candidate is a creative and responsible self-starter with advanced knowledge of food prep methods and operations, menu creations, kitchen equipment, and materials. Must have experience leading kitchen staff, and have excellent analytical, organizational, customer service skills, and strive to deliver an outstanding dining experience. Candidates will also have a strong, positive attitude with a winning personality, and able to build relationships within the team, department, and Senior adults we serve.
Experience and Skills
- Must possess advanced knowledge of food preparation methods and operations, menu and seasonal creations, kitchen equipment, and materials used in food prep work.
- Must possess general knowledge of food operations, i.e., product specifications, customer service, management, food supplies, sanitation, supervision, etc.
- Must possess excellent communication and interpersonal skills.
- Must possess strong presentation and plating skills.
- Must have experience in supervising kitchen staff.
- Ability to negotiate and manage conflict.
- Active Listening -- Giving full attention to what other people are saying, taking time to understand the points being made, asking questions as appropriate, and not interrupting at inappropriate times.
- Judgment and Decision Making -- Considering the relative costs and benefits of potential actions to choose the most appropriate one.
