Baker
SUMMARY:
This position supports the Bread Manager by baking artisan breads, pastries and desserts
REQUIREMENTS:
Education: Preferred: High School Diploma or Equivalent, or working towards equivalent
Experience: Required: Baking or cooking experience at full service bakery or restaurant.
Skills:
- Ability to follow recipes and efficiently produce the desired breads.
- Ability to efficiently deal with the rigorous demands of the bakery business.
- Ability to interact with fellow bakers and work as a team.
- Ability to work in a neat and organized manner.
- Can-do customer service
- Knowledgeable baking skills and speed and agility
- Ability to show grace under pressure
Physical:
- Use of legs and feet, arms and hands, walk, stand, and carry up to 50 lb.
- Vision abilities include close vision, distance vision, color vision, peripheral vision, depth perception and ability to focus
Mental:
- Read write, and speak English, basic math skills, work under pressure.
WORKING CONDITIONS:
This person will work in a bakery/kitchen atmosphere, which is a semi-hazardous environment with moderate to heavy noise. There is a great deal of mechanization in our bakery, and as such, employees must be mindful when working with mixers, moulders, shapers and ovens. Hazards include hot surfaces, slippery floors, sharp knives and objects, heavy lifting, hot liquids, and bakery equipment including proofers, shapers, moulders, processors, and mixers.
The working hours are dependent on the weekly schedule established by the Bread Manager of a seven-day per week bakery that operates around the clock. Hours worked, however, must reflect the actual time required for successful completion of a project/task. This is a variable position and there is no guarantee of a specific number of hours.
REPORTING RELATIONSHIPS:
The Baker reports to the Bread Manager.
DUTIES AND TASKS:
- Prepares artisan breads according to established recipes.
- Reviews production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities.
- Spreads or sprinkles a range of various toppings on specialty baked goods.
- Receives ingredients and other supplies from main kitchen and/or pantry as required for daily operations.
- Cuts and weighs dough into uniform portions with knife or divider; molds dough into loaves or other shapes, and places in pans; proofs dough and bakes in oven; inspects product for quality during and after baking and makes adjustments to processes as required.
- Cleans and maintains work areas, utensils and equipment.
- Detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment and/or other unusual conditions.
- Completes production sheets and other records as required.
- Performs miscellaneous job-related duties as assigned.
