BEVERAGE MANAGER: JOB DESCRIPTION
INTRODUCTION
Located in the heart of Houston’s museum district, Granger's is an upscale-casual neighborhood restaurant and bar that specializes in serving classic American cuisine alongside signature cocktails and carefully selected wines in a dining room filled with old-world charm and timeless décor.

Paying homage to both the family name and the incredibly diverse neighborhood in which owners Ryan and Josephine Granger have successfully operated two fast-casual concepts, Bodegas Tacos Shop and Fia’s Pizzeria, for the last 18 years, Granger’s aims to continue serving this historic area of Houston for years to come.

COMPENSATION RANGE:
- $50,000 to $55,000 per year

RESPONSIBILITIES/DUTIES
- Follows daily manager’s agenda and opening and closing checklists for all departments.
- Ensures restaurant appearance (inside and outside) is up to company standards prior to every shift.
- Ensure bar appearance (in and out of guest view) is organized to maximize efficiency and regularly deep cleaned.
- Assumes 100% responsibility for the restaurant’s liquor, beer, and wine program through the following means:
+ Oversee bar staff to ensure 100% recipe adherence on all specialty cocktails (components, measurements, glassware, and garnish)
+ Oversee all staff to ensure accurate pours on all liquor, beer, and wine
+ Oversee all FOH to ensure accuracy of all components of coffee and hot tea service. + Conduct a physical count of all liquor, beer, and wine on a weekly basis
+ Ensure the coffee, liquor, beer and wine program is operating at budgeted cost percentage.
+ Determine variance on a monthly basis; report to General Manager and Ownership on solutions for limiting the variance, and follow through with implementing the solutions
- Conduct all coffee, liquor, beer, and wine ordering according to proper procedure:
+ Maintain good relationships with coffee, liquor, beer and wine reps
+ Continuously educate staff by organizing consistent pre-shift staff trainings either led by the Granger’s team or local reps.
+ Drive energy behind alcohol sales through creating regular in house contests for staff.
+ Ensure consistent pricing from vendors on all liquor, beer, coffee and wine products
+ Check all incoming orders to ensure the delivery matches the purchase orders
+ Act as decision maker for new products coming in
+ Work with Bar lead on training, cocktail development and wine features.
+ Track bar sales and monitor staff to look for opportunities for growth and increased efficiency
- Assumes responsibility for their departments, making sure the bar schedule is done in accordance with the budget and ensuring the best coverage for 100% customer satisfaction.
- Assures all staff training and development is performed correctly and thoroughly to ensure minimal staff turnover.
- Assumes 100% responsibility for coaching new managers and all employees per shift in all departments following job descriptions, policies and procedures.
- Assumes 100% responsibility for reviewing incoming FOH applications, conducting initial interviews according to company guidelines, and properly filling out the interview rating form, with a focus on the bar.
- Assumes 100% responsibility for on-boarding GM approved FOH hourly hires.
- Attend and participate in manager meetings..
- Assumes 100% responsibility for operating the property in accordance with all state and local laws and ordinances.
- Assumes 100% commitment to management, and continued employee training and development.
- Assumes 100% responsibility that all receiving is physically accounted for at the price quoted for.
- Assures that all staff training material including but not limited to: Employee Handbook, FOH Training Manuals by Position, and all policies and procedures are up to date.
- Works in accordance with the accounting department, providing all accurate information needed to produce DSR’s, P&L’s, budget and payroll.
- Work in accordance with TABC regulations
- Assists the general manager with the planning and execution of all marketing strategies in a timely manner.
- Works with the kitchen manager(s) and kitchen staff to assure 100% quality in our food product 100% of the time.
- Is trained and able to train staff in all POS functions and all associated software.
- Ensures 100% guest satisfaction during the shift.
- Pledges to perform job functions while upholding company policy and procedures according to company operating policies manual.
REQUIRED TRAINING/ EDUCATION/EXPERIENCE
- Minimum of two years as a manager at an upscale restaurant
- Minimum of two years experience with a craft cocktail program
- Must possess detailed knowledge of front and back of the house management
- Must possess detailed knowledge of wine and spirits
- Must be able to accurately cost drinks and track sales
- Must be willing to work with local spirits representatives
- Must be proficient in budgeting, excel, staff scheduling, interviewing, training, and shift supervision
- Must have both the Texas Food Manager Certification and the TABC Seller Certification

This position reports to General Manager.
HTX Restaurant Group was established in 2005 with the opening of its first restaurant, The Park Grill in the Houston Museum District. Shortly after, the Park Grill began catering its American food fare like breakfast buffets, casseroles, wraps, panini’s, sandwiches, salads, and soups into the Texas Medical Center.
Since then the HTXRG’s culinary team has grown and created several new food concepts, Bodegas Taco Shop and Fia's Pizzeria. These are both brick and mortar restaurants that offer unique menus to our dine-in guests as well as our catering customers. The key to all these concepts is the variety now offered to our neighbors and catering clientele.
