Reports to: Back of the House Director
Responsibilities:
- Kitchen Operations: Oversee all aspects of back of the house operations, including food preparation, cooking, and plating. Ensure adherence to Chick-fil-A's food quality and safety standards.
- Inventory Management: Monitor inventory levels, place orders, and manage stock rotation to ensure freshness and minimize waste. Coordinate with suppliers and vendors for timely deliveries.
- Scheduling and Labor Assistance: Assist in creating and maintaining staff schedules, ensuring adequate coverage while managing labor costs. Adjust schedules as needed based on business volume and staffing requirements.
- Quality Control: Conduct regular inspections to ensure food quality, presentation, and portioning meet Chick-fil-A's standards. Address any issues promptly and implement corrective actions.
- Kitchen Equipment Maintenance: Ensure proper operation, maintenance, and cleanliness of kitchen equipment. Coordinate with maintenance staff for repairs or replacements as necessary.
- Food Safety and Sanitation: Ensure compliance with food safety and sanitation regulations. Implement and enforce proper procedures for food handling, storage, and cleanliness.
- Team Leadership: Lead and motivate kitchen staff, fostering a positive and collaborative work environment. Set performance expectations, provide feedback, and recognize outstanding performance.
- Cost Control: Monitor food and labor costs to meet budgetary goals. Identify opportunities for cost savings without compromising quality or customer satisfaction.
- Menu Development and Specials: Collaborate with the BOH team and Back of the House Director to deploy new menu items and seasonal specials.
- Communication: Effectively communicate with team members, other managers, and departments to ensure smooth operations and resolve any issues or challenges that arise.
- Reporting and Documentation: Maintain accurate records and reports related to food inventory, wastage, labor hours, and any operational issues. Provide necessary reports to upper management.
- Managing Back of the House Shift Managers: Provide guidance and support to back of the house shift managers, ensuring they have the resources and tools needed to effectively manage their teams and operations.
- Truck Ordering and Receiving: Assist in ordering food and supplies from vendors, ensuring timely and accurate deliveries. Independently handle the unloading, organization, and storage of truck shipments if needed.
Requirements:
- Previous experience in a kitchen management or leadership role, preferably in the restaurant or hospitality industry.
- Strong knowledge of back of the house operations, including food preparation, cooking techniques, and kitchen safety procedures.
- Proficiency in managing inventory, placing orders, and controlling costs.
- Excellent leadership and team-building skills.
- Strong problem-solving and decision-making abilities.
- Knowledge of food safety and sanitation regulations.
- Ability to work flexible shifts, including mornings, evenings, weekends, and holidays, based on the needs of the restaurant.
- Proficient computer skills and familiarity with restaurant management systems.
