Job Responsibilities:
- Lead and manage all kitchen functions, including food purchasing, preparation, maintaining quality standards, sanitation, and cleanliness.
- Ensure all kitchen personnel follow proper sanitation practices and that regulations are met.
- Maintain appropriate cleaning schedules for kitchen equipment, food storage areas, and other facilities.
- Check the quality of both raw and prepared food to meet The Wildbirch Hotel’s culinary standards.
- Ensure proper food holding, refrigeration, and temperature control procedures.
- Estimate food and supply requirements, managing costs effectively while maintaining portion control and minimizing waste.
- Train and instruct kitchen staff in the preparation, cooking, and presentation of food, ensuring consistency across all dishes.
- Collaborate with hotel management to plan and price menu items, reflecting the local Alaska culture, seasonal availability, and guest preferences.
- Supervise kitchen staff and coordinate food preparation, ensuring seamless service across all dining outlets.
- Ensure consistency in food presentation and preparation in line with The Wildbirch Hotel's recipes and service standards.
- Schedule kitchen staff according to business needs while controlling labor costs.
- Inspect kitchen supplies, equipment, and work areas to ensure cleanliness and compliance with health regulations.
- Manage food orders and maintain inventory according to The Wildbirch’s standards and guidelines.
- Oversee production schedules to ensure timely preparation and service of meals, whether in the restaurant or for special events.
- Work with local suppliers to source fresh, local ingredients and negotiate prices to maintain cost efficiency.
- Ensure kitchen equipment is maintained in excellent working condition through regular inspections and preventative maintenance.
- Collaborate with hotel departments to ensure a seamless guest experience and participate in community and hotel events.
- Maintain thorough records, including inventory, cost analysis, and scheduling, ensuring efficient kitchen operations.
Experience:
- Prior Experience: 3-5 years as an Executive Chef or Executive Sous Chef in a hotel or high-end restaurant environment, with a focus on delivering exceptional culinary experiences.
- Education: High school diploma or GED required; Culinary Degree or related degree preferred.
- IT Expertise: Advanced knowledge of kitchen management software and proficiency with Microsoft Office Suite.
- Subject Expertise: Strong leadership and organizational skills; ability to remain calm under pressure, multitask, and work in a fast-paced environment.
