Prepares and serves all meals and snacks per facility policies and procedures and state/federal guidelines. Ensures all dietary staff complete assigned daily tasks.
Responsibilities:- Prepares food according to recipe or department procedures. Handles food in sanitary manner, wearing gloves and using utensils as needed.
- Demonstrates knowledge and ability to substitute menu items as needed.
- Stores food items appropriately under dietary guidelines and knowledge of proper rotation and FIFO.
- Responsible for all aspects of the dietary service, including ordering and receiving food and supplies in the absence of the Foodservice Director.
- Checks equipment and cooking areas often to make sure they maintain safety and sanitation requirements. Estimates food service requirements and controls service portions, eliminating waste and leftovers. Keeps excess supplies and equipment off the floor and stored in designated area. Reports hazardous conditions.
- Assists in infection control by using good hand washing techniques and observing universal Precautions.
- Cleans, disinfects and returns care equipment to its designated storage area. Uses only the equipment trained to use in a safe manner.
- Takes temperatures and maintains temperatures of food at correct levels. Records temperatures in temperature log.
- Delegates appropriate duties and collaborate with Food Service Director and Assistant Food Service Director.
- Facilitates open communication at all level; with residents, families, co-workers and staff.
- Coordinates and collaborates with other departments to optimize quality care and satisfaction.
- Monitors and evaluates dietary operations.
- Properly secures premises and equipment after use and at the end of the day.
- Trains and orients new employees and participates in ongoing in-service training programs.
- Provides ongoing instruction, feedback and counseling. Makes recommendations to Director concerning employee performance and related personnel action and communicate and develop actions based on performance and improvement principals.
- Other Duties as assigned: Handles special projects and rush assignments as needed, in a timely manner.
Education, Knowledge, Skills and Abilities Required:
- Computer skills, including Microsoft Office.
Education, Knowledge, Skills and Abilities Preferred:
- High School diploma, general equivalency diploma (GED), and/or GED equivalent programs.
- Vocation, technical or on the job training.
- General cooking experience, preferably in a nursing home or hospital.
- Long-term care facility experience.
- Prior work experience with geriatric and disabled populations.
Licenses and Certifications Required:
- Serv Safe Certification.
