With minimum supervision, the Executive Chef prepares and serves hot food, cold food, supplements, and dessert items for residents, team members, special functions, and guests of Westminster Village. Using menus, standardized recipes, procedures, and census information provided, portions foods in a manner to accommodate correct amounts needed with fiscal responsibility. The Chef leads a variety of tasks with the kitchen and other food service areas including training, sanitization and maintenance in the kitchen. Must be able to incorporate the core values of Westminster Village in all activities while fostering a team culture that follows this example. This position supervises cooks and culinary attendants.

ESSENTIAL DUTIES AND RESPONSIBILITES:
• Prepares and serves attractively presented hot food, cold food, food supplements and garnishes in amounts consistent with census for residents, team members, guests and special events as assigned according to standardized recipes and safe food handling practices.
• Oversees production of various menus as indicated on the production worksheets utilizing standardized measurements. Assists in the completion of food production work sheets.
• Creates signature feature culinary dishes to supplement both the 5-week menu cycle and always available menus. Assists with planning future rotational menus special event programming and culinary related presentations and demonstrations.
• Takes lead with all procurement activities using software that supports consistent ingredients that align with standardized recipes in proper quantities and with lead time that supports food preparation prior to cooking and service.
• Maintains and records proper serving temperatures and refrigerated storage temperatures. Coordinates the planning of and correctly utilizes properly rotated food items.
• Frequently inspects and maintains all work, storage, and preparation areas in a clean and sanitary manner to ensure that compliance is achieved with FDA Food Code.
• Assists in establishing departmental regulations and procedures in conformance with administrative and health code guidelines as well as all Westminster Village policies.
• Participates in interviews for prospective team members, supports training of new and current staff and works with the Human Resources office to provide required documentation for team members including evaluations, discipline and other applicable documentation.
• Creates cook schedules and maintains adjustments to cook schedules on scheduling software. Manages cook team members requests for time off.
• Oversees kitchen production and supervises staff. Schedules daily assignments for all kitchen team members.
• Communicates and works well with all staff at Westminster Village to support the overall mission of the organization.
• Assists in the End of Fiscal Year Budget and provides insight to needs for yearly Capital Budget.
• Performs other job duties as assigned.
SKILLS, KNOWLEDGE AND ABILITIES:
• Ability to comply with HIPPA regulations and FDA Food Code.
• Ability to cope with a sense of urgency associated with the scheduled services for the residents. Persists with frequent interruptions from staff, from other departments, and from residents. May be exposed to emotionally upset residents, family members and team members.
• Ability to demonstrate patience, understanding, and tact in interactions with residents, residents' families, and team members.
• Ability to process various forms of communication and be able to provide direction to team members.
• Prior experience with Microsoft Office Tools and food service software is required.
High School Diploma, GED or equivalent. Must have significant culinary skills. Some knowledge of special diets is desired. The ability to obtain food handler, and ServSafe managers certification is required. Certifications or designations from the American Culinary Federation highly desired.
