Kantishna Roadhouse (KRH) is a full-service, backcountry lodge located 90 miles into the pristine natural wonder of Denali National Park in a remote area where few are lucky enough to travel. Employees at the Roadhouse will find adventure, tranquility, and an escape from every-day modern life. The season at Kantishna Roadhouse is from June 4th- September 14th and KRH is seeking candidates available to stay the entire season. Room and Board are provided during the season at no cost for this position.
JOB SUMMARY: Under the direction of the Head Chef, the Prep Cook assists with daily preparation of menu items for breakfast, lunch, and dinner; cleans all food service areas daily; and washes dishes and pots and pans, mops, and does general kitchen cleanup as assigned.
Responsibilities:ESSENTIAL FUNCTIONS:
- Prep ingredients for chefs by washing, peeling, cutting, and seeding fruits and vegetables
- Clean, cut, slice, and grind meats, poultry, and seafood as directed
- Assist in preparation of soup and prepare sandwiches and lunch for guests
- Weigh and measure designated ingredients
- Carry pans, kettles, and trays of food to and from work stations, stove, and refrigerators
- Set up/break down employee buffet-style meals; properly date and store leftover in employee refrigerator
- Clean employee refrigerator, microwave oven and buffet area on a regular basis
- Date and store foods in walk-in cooler
- Clean work areas, equipment and utensils, segregate and remove garbage
- Unload food and other supplies from delivery truck
- Stock delivered items
- May be required to work split shifts
- Other duties as assigned

SUPERVISION:

QUALIFICATIONS:
- Must have a current ADEC Alaska Food Workers Card
- Must be able to pass pre-employment and random drug screening tests
- One (1) year culinary experience preferred
WORKING ENVIRONMENT: Kantishna Roadhouse is remotely located inside Denali National Park. The work is performed in the kitchen setting with a wide variety of people in differing functions, personalities, and abilities. During mealtimes, the employee will work under pressure.
