Job Summary:
It all began with a group of people who dreamt of starting something completely new. Together, we established La Bonanza Hospitality Group, a company dedicated to providing cutting-edge solutions and exceptional services. As a Kitchen Manager with La Bonanza, you are responsible for the preparation, presentation, and service of all menu items, as well as developing and training all hourly back-of-house staff. You will also be responsible for maintaining kitchen performance standards, overseeing quality, health, and safety documentation, and working closely with the General Manager to ensure the kitchen is working as a cohesive, efficient team.
Supervisory Responsibilities:
• Supervise multiple levels of kitchen staff.
• Provide timely coaching, performance feedback, and align team development goals with organizational objectives.
• Promote and enforce the company’s safety programs and guidelines.
• Review time and attendance in Toast POS; follow up on any discrepancies.
• Operate with the highest level of conduct, integrity, and confidentiality, setting a positive example for the team.
Duties and Responsibilities:
• Enforce company procedures, policies, and quality standards.
• Maintain weekly budgets and financial reports according to company guidelines.
• Ensure that all food is consistently prepared and served according to established recipes, portioning, cooking, and serving standards.
• Supervise kitchen team, including interviewing, hiring, evaluating, and disciplining personnel as needed.
• Provide orientation, training, and ongoing development of new and existing kitchen staff.
• Prepare all required documentation (forms, reports, schedules) in a timely and organized manner.
• Ensure all equipment is kept clean, operational, and properly maintained.
• Control food costs by following proper requisition, storage, recipe adherence, and waste control procedures.
• Schedule kitchen labor according to anticipated business volume while meeting labor cost objectives.
• Train kitchen personnel in proper cleanliness and sanitation practices.
• Uphold proper cleaning schedules for floors, mats, walls, hoods, equipment, and storage areas.
• Maintain and uphold the company’s vision and values.
• Demonstrate a passion for details and a willingness to learn.
• Participate in pre-service duties and applicable closing duties.
• Become familiar with daily menus and ensure seamless execution.
• Maintain a safe, sanitary, and organized work environment.
• Perform other duties as required or assigned.
Required Skills and Abilities:
• 3-5 years of kitchen management experience required.
• Expertise in kitchen sanitation and safety regulations.
• Excellent organizational, leadership, and conflict management skills.
• Ability to effectively manage a team in a fast-paced, high-pressure environment.
• Culinary school certification or degree in restaurant management is a plus.
• Flexibility to work long shifts, including nights and weekends (50-55 hours/week, as needed).
• Must be fluent in English; Spanish proficiency preferred.
Education:
• Certification from an accredited culinary school or a degree in restaurant management preferred.
• ServSafe Manager certification, or the ability to obtain within 90 days of employment.
