Job Summary
The Restaurant at Gilder, located in the American Museum of Natural History, is a 90-seat full-service brasserie serving a seasonal menu rooted in classic French technique but inspired by American bounty. The restaurant is open to museum patrons seven days a week for lunch only and the occasional special event.
The Executive Sous Chef will be expected to support the Executive Chef in all areas of the operation including menu development, staff training and management, sanitation, cost management, and communicating with the facilities team on maintenance and repairs when needed. This small operation prioritizes culinary expertise. The Executive Sous Chef will collaborate with floor managers for smooth operations in the front and back of the house, delivering a quality dining experience for guests.
Key Responsibilities:
+ Assists the Executive Chef with handling cost controls and control expenditures for the account
+ Assists the Executive Chef with planning and crafting menus
+ Produces and execute catering events
+ Rolls out new culinary programs in conjunction with Company marketing and culinary team
+ Supervise hourly kitchen staff, ensuring adherence to preparation, sanitation, and presentation standards.
Preferred Qualifications:
+ A.O.S. Culinary Arts Degree or equivalent experience and culinary certificate required.
+ Two years of progressive culinary/kitchen management experience, depending upon formal degree or training
+ Catering experience a plus
+ High volume, complex foodservice operations experience - highly desirable
+ Institutional and batch cooking experiences helpful
+ Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
+ Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
+ Must be willing to participate in patient satisfaction programs/activities
+ ServSafe certified - highly desirable
