POSITION SUMMARY:
The Dining Services Director/Executive Chef is directly responsible for establishing and maintaining all standards of quality, conduct, customer service, and productivity within the Dining Services Department. Maintain appropriate levels of staffing and food/supplies inventories and work within established budget guidelines. He/she must possess general knowledge in the following areas of operation: productivity, costs and budgets, energy conservation, purchasing, receiving, storing systems, preparation and serving techniques, pilferage and portion control, personnel development, kitchen sanitation and general management of Dining Services Department. Promote a thorough and continuous understanding among all employees of the importance of the Dining Services Department to the quality of life for residents and prospective residents. The Senior Living Dining Services Director is responsible for overseeing all aspects of the dining program within a senior living community. This includes managing food service operations, ensuring the highest level of service, and maintaining compliance with food safety regulations. The director is responsible for developing menus, managing dining staff, and creating a dining environment that enhances the overall resident experience. This role requires a blend of culinary expertise, management skills, and a deep understanding of the nutritional needs of senior residents.
Key Responsibilities:
Dining Operations Management:
- Oversee the daily operations of all dining services, including breakfast, lunch, dinner, and snacks for residents.
- Ensure that meals are prepared, presented, and served in a timely, attractive, and efficient manner.
- Monitor food quality, portion control, and temperature to meet company and regulatory standards.
- Manage the dining room environment to ensure it is clean, safe, and welcoming for residents.
Menu Planning & Nutritional Management:
- Develop and update diverse and nutritious menus that meet the dietary needs of senior residents, including special dietary needs such as low sodium, low sugar, and modified textures.
- Work closely with residents, family members, and healthcare professionals to accommodate special dietary requests and restrictions.
- Collaborate with dietitians or nutritionists to ensure that menus are balanced and meet regulatory guidelines.
- Plan for seasonal menu changes and incorporate resident preferences when possible.
Staff Management & Training:
- Recruit, hire, train, and supervise the dining services team, including cooks, servers, and dishwashers.
- Provide ongoing staff training to ensure adherence to food safety, sanitation standards, and hospitality expectations.
- Schedule staff to ensure appropriate coverage for all dining services, ensuring shifts are adequately staffed and that labor costs are managed effectively.
- Foster a positive, team-oriented environment with a strong focus on resident satisfaction and quality service.
Resident and Family Interaction:
- Ensure excellent customer service by actively seeking feedback from residents and their families regarding dining services.
- Address and resolve any concerns or complaints related to dining services promptly and professionally.
- Organize and participate in regular resident meetings to discuss dining preferences, special events, and menu changes.
Financial Management:
- Develop and manage the dining services budget, ensuring that food costs and labor are within budgetary guidelines.
- Track inventory, place orders, and manage supplies to minimize waste and maximize efficiency.
- Negotiate with vendors and suppliers to obtain the best prices for food, supplies, and equipment.
Health and Safety Compliance:
- Ensure that all dining services operations are in full compliance with local, state, and federal health regulations.
- Maintain cleanliness and organization of kitchen, dining areas, and food storage spaces.
- Ensure food safety practices are followed by all staff, including proper food handling, storage, and sanitation procedures.
- Conduct regular inspections to verify that the dining area, kitchen, and related areas are safe and hygienic.
Special Events & Programming:
- Coordinate special dining events and holiday meals that enhance the community experience for residents and their families.
- Work with the activity department to plan and support themed dinners, birthday parties, and other special celebrations.
- Collaborate on event planning to ensure dining services align with community needs and resident expectations.
Reporting & Documentation:
- Maintain accurate records of food orders, menus, inventory, and food safety audits.
- Prepare regular reports for the Executive Director or leadership team regarding dining operations, budget performance, and resident satisfaction.
Qualifications:
Education:
- Bachelor’s degree in Culinary Arts, Hospitality Management, Dietetics, or a related field preferred.
- Relevant certifications such as ServSafe Food Safety Manager certification or a similar credential are required.
Experience:
- Minimum of 3-5 years of experience in dining services or food management, with at least 2 years in a leadership or supervisory role in a senior living or healthcare environment.
- Previous experience in managing a team, planning menus, and budgeting for a dining department is highly preferred.
Skills & Abilities:
- Strong culinary and food service management skills with an understanding of the nutritional needs of seniors.
- Ability to manage, motivate, and lead a team to achieve high levels of performance.
- Excellent communication and customer service skills to interact effectively with residents, families, and staff.
- Solid organizational and time-management skills, with the ability to manage multiple priorities and meet deadlines.
- Knowledge of local, state, and federal regulations regarding food safety and dining services.
Physical Requirements:
- Ability to stand for extended periods, lift up to 50 pounds, and manage physical tasks in a busy kitchen and dining environment.
- Ability to work in various environmental conditions, including hot kitchen areas and dining spaces.
Working Conditions:
- The position may require working on weekends, holidays, and evenings based on the needs of the community.
- Exposure to kitchen equipment, food preparation, and dishwashing areas, with associated physical demands.
