The University of California, Merced is required to provide a reasonable estimate of the compensation range for this role. This range takes into account the wide range of factors that are considered in making compensation decisions including but not limited to experience, skills, knowledge, abilities, education, licensure and certifications, and other business and organizational needs. It is not typical for an individual to be offered a salary at or near the top of the range for a position. Salary offers are determined based on final candidate qualifications and experience. The full salary range for this position is $49,200 - $83,200. The budgeted salary or hourly range that the University reasonably expects to pay for this position is $50,160 - $62,700/yr.

About the Job
The Cafe Supervisor will be responsible for assisting the Retail Manager in the day-to-day operations of the Lantern Cafe and other coffee concepts within the Dining & Retail portfolio. This includes but is not limited to; employee training, supervision and leadership, barista/coffee production, customer service support, food safety and sanitation, cost controls, purchasing, food/beverage material storage, maintenance and repair of service/production equipment and facilities, service systems, and quality control. The incumbent will have the skills necessary to provide support to the Lantern Cafe as well as other coffee/espresso concept locations to ensure the highest quality of product and service. Incumbent will also provide department-wide support for Auxiliaries services for large campus events or whenever needed. Working under strict deadlines and budgetary expectations, all members of leadership are required to work together to ensure the success of the operation. All supervisors serve as key members of Dining & Retail Services Management and are responsible for all Dining Center operations as assigned.
KEY RESPONSIBILITIES
SUPERVISION, ADMINISTRATION & CUSTOMER SERVICE
- Closely supervise, coach, motivate & effectively direct the student and staff workforce. Tasks include, but are not limited to; assigning work, training & development, performance management (including completing annual performance evaluations), ensuring that policies and guidelines are followed, resolving complaints and grievances, schedule writing within the budgeted allotment, assisting with hiring decisions, time record tracking, and timecard approval. Organize and implement training of new staff and students based on operational guidelines. Ensure standards of customer service are being upheld by all staff and students. Responsible for the implementation of personnel policies & procedures. Ensure standards for policies and procedures are being upheld.
FOOD SAFETY & SANITATION - Ensure staff and students are consistently following food safety standards at all times. Oversee completion of daily, weekly and impromptu health inspections. Possess full understanding of food safety procedures and act as back up in implementing them, such as daily temperature records, as is necessary. Respond with urgency to food safety complaints as they arise. Participate and lead safety trainings for all Staff and student employees.
CAFE EXPERTISE AND STRATEGIC PLANNING - Participate in strategic conversations regarding the future of coffee services at UC Merced. Liaison with vendors to ensure compliance to brand standards, that we are taking advantage of promotional opportunities that can benefit our students and that we are tapped into the best training resources and equipment possible for all Dining & Retail operations. Routinely attend trainings to sharpen all skills related to Barista service, coffee tasting and quality control and up and coming trends. Ensure that all Staff and student employees in representation of the cafe are well trained to ensure knowledge of their products and meet the standards of excellent guest services within the cafe environment.
SALES, POLICY AND TRAINING - Supervising operations by assuring that service & product offerings meet needs and cost efficiency. Responsible for the adherence to campus and departmental accounting and cash handling policies and procedures. Responsible for the adherence to policy & goals of purchasing. Assist in long-range strategic and /or operational planning and goal setting through comprehensive operational and financial analysis of existing contract operations and the identification and analysis of new business opportunities. Assist in ensuring the Lantern Cafe and other coffee/barista concepts payment transactions are accurate. Ensure all cashiering staff are trained in the appropriate cash handling policies and practices outlined by the University and Dining & Retail Services. Assist with the reporting of cash for all revenue centers and the reconciliation of cashier/revenue center reports and deposits. Participate in training and guidance of all Staff and student employees in proper cashiering protocol to ensure minimal errors and excellent guest services at all times.
FACILITY MAINTENANCE - Assist Managers in ensuring the upkeep of all equipment and the facility to maintain full operational ability. Communicate with the Retail Manager to ensure maintenance is scheduled, as needed. Assist with the maintenance and organization of all areas within the operation.
Qualifications
EDUCATION and REQUIREMENTS - Bachelor's degree in related area.
- 2 years of related experience or 6 years of related, experience and education.
- Valid driver's license and clean driving record.
- Must be ServSafe certified within 90 days of employment (costs covered).
CRITICAL KNOWLEDGE AND SKILLS - University food service lead or supervisory experience or equivalent cafe/barista supervisory or management experience.
- Working knowledge of safety and sanitation in food preparation in accordance with HAACP standards.
- Demonstrated skills in marketing, merchandising and inventory management.
- Experience with Excel, Word, PowerPoint and Outlook.
- Ability to perform basic mathematical equations.
- Ability to successfully communicate in English - read, write and follow oral and written instructions.
- Accuracy in handling money; knowledge of handling checks and credit cards.
- Ability to communicate effectively with a diverse group of people.
- Expert knowledge of dining center operations and procedures is required for both front of the house and back of the house operations.
- Experience leading teams.
- Prior cashiering experience.
- Higher education food service experience. (Preferred)
- Retail or restaurant experience. (Preferred)
- Bilingual in Spanish. (Preferred)
- Prior merchandizing experience. (Preferred)
