Position Description:
Performs functions to manage all aspects of the sanitation operations for cooked meat and oil recovery, as well as supervises all third shift activities in the South Holland plant.
Primary Responsibilities:
- Coordinates and/or facilitates training sessions for safety, chemical usage, and sanitation procedures for sanitation employees and other employees as needed in all locations
- Establishes standards for pre-op, post-op, and microbial and bioluminescence swabbing and directs sanitation activities to ensure standards are met
- Ensures compliance with the Master Sanitation Schedule
- Participates in federal and third-party food safety audits, providing corrective actions as needed
- Monitors and controls sanitation costs including chemicals, equipment, supplies and labor
- Serves as liaison with on-site government officials
- Manages and eliminates deviations in the listeria prevention and control program
- Participate in the sanitary design reviews of equipment.
- Leads efforts in conjunction with operation managers and the sanitation team to define and improve sanitation and food safety programs
- Participates as a member of the HACCP core team
- Evaluates and implements in-process and customer specifications
- Reports relevant KPI’s and develops improvement programs to improve all applicable measures
- Performs other functions as assigned
- Continually improves safety performance by addressing employee safety attitudes while ensuring compliance with all state, federal, and company regulations
- Initiates plans and processes which minimize manufacturing costs and operate within established budgets through effective utilization of manpower, equipment, facilities, and materials
- Ensures production runs in a timely manner and meets quality assurance specifications
- Ensure PMs are completed on time and direct the 3rd shift maintenance supervisor accordingly
- Manages the operation department of Cook and Chill to assures capacity is used and maximized
- Manages and leads the third shift Trim Operation to ensure attainment, quality and yields are acquired
- Establishes and maintain process utilizing sanitation team members to disassemble, clean, set up and reassemble the equipment after pre-op
- Ensures the production floor is cleaned, pre-op is conducted and released on time for production start up
Supervisory/Management Responsibilities:
- Manages all employee activities during third shift
- Schedules and assigns work for department staff; follows up on results
- Supervises department employees in their daily activities which include: training, motivating, disciplining, and evaluating employees
- Maintains department staff by selecting and orientating new employees
Requirements:
- Bachelor of Science degree
- 5 + years’ experience in food safety and sanitation
- 3-5 years management experience
- Mechanical skill and knowledge of food processing equipment
- Strong working knowledge of USDA guidelines and regulations, SSOP, and SOP requirements, HACCP
- Working knowledge of micro sample collection and analysis including ability to interpret results and take corrective actions
- Proficient with computers and various software packages
